Does anyone have a good meatloaf recipe? I've gotten several from different websites and they are either very bland (like a pile of ground meat) or very greasy. I would love to find something that I might even be able to sneak some veggies into.

Tyler florence's Dad's favorite meatloaf on foodnetwork is great and has the most vegies while still being an actual meatloaf. delicious and using half ground pork makes it not only more flavorful but much less greasy. really delicious

We do have a favorite recipe for a Turkey Meatloaf. Its a rachel ray recipe, made with ground turkey meat and stuffing. Its like "HAPPY THANKSGIVING" in loaf form. lol Be sure to make the apple cider gravy to go on top.

My husband is not a big beef eater, and doesn't like meatloaf, but he likes this one! Saw it on Oprah, and it's from Kaite Joel (Billy Joel's wife). It's yummy, but makes a lot, so last time I divided the loaves and froze one. Also, be aware that you can replace bread crumbs with oatmeal in meatloaf recipes, which makes it that much healthier. You can also sprinkle some flax seed in, and/or wheat germ to add an extra nutritional punch...

When making this, you can use frozen peppers and onions for shortcuts--just try to squeeze out some of the water after sauteeing the veggies.

Well, D., looks like you've gotten some great responses, but I'll add one more. I'm sorry to say I don't have exact measurements, since this is my mother's recipe and she never used one, but I'll do my best. She always used ground beef, but I've made it with ground turkey and it's really good, too.
Pretty much to taste, you take the ground meat and mix it with chopped onions and green peppers (they do come chopped and frozen, which my mother always used, and it seemed fine, although I used fresh) and an egg. Add salt and pepper and sage to taste. Shape in a loaf pan, leaving room on the sides for the topping.
Mix together catsup, brown sugar and mustard powder--again, this is to taste--and pour mixture over loaf. Bake at about 350 till cooked through, maybe 45 minutes. You can make a few smaller ones to freeze for later, but then the cooking time would be less.
I know this is pretty inexact, but maybe with some of your others you can adapt. It's a very popular meatloaf.

Hi D.. I make meatloaf rather often at home. I use three key ingredients (the rest really depends on what I have in the fridge and cupboard at the time): lean ground turkey instead of beef, old fashion oats instead of breadcrumbs and Peter Luger steak sauce instead of ketchup to make it healthier and very tasty meatloaf. My family loves it! I don't really measure but will try to give you some ideas:

1 lbs lean ground turkey
1 small onion, chopped
1/2 bell pepper, chopped
2 garlic cloves
3/4 cp mushrooms, sliced (optional)
1 tbsp worcestershire sauce
1/3 cp grated parmesean or romano cheese
1/2 cp old fashion oats
1/2 tbsp olive oil
1 to 2 eggs
1 tbsp fresh herbs (sage, thyme, oregano, etc.)
1 cp Peter Luger steak sauce, divided
Salt & pepper to taste

Sautee onions, peppers, mushrooms and garlic with PAM cooking spray until softened, about 5 minutes. Allow to cool. In a bowl combine all ingredients using only 1/3 Peter Luger steak sauce at this stage and adding one egg at a time (you may not need to use the second egg, depends on how moist the mixture feels). Form into a loaf shape and pour remaining steak sauce over meatloaf and bake at 350 for about 45 minutes or until internal temp is 170 degrees. Hope you like it.

Mine is a winner in our home, but keep in mind that I have a large family (5 children, 3 of which are adults) so you may have to scale it down.

T.'s Meatloaf

2 1/2 - 3 lbs. lean ground beef (90%)
2 eggs
Basil (either fresh or dried)
2 cloves Garlic, minced
1/3 c. Pecorino Romano grated grating cheese
2 - 3 stalks celery, diced
Salt & Pepper to taste
Italian seasoned bread crumbs (add about a cup or more to start then more as needed)
1 -2 cans Stewed Tomatoes

Place meat in a bowl then add eggs, basil, garlic, grating cheese, celery, salt, pepper, and celery. Mix well with your hands, then add bread crumbs until the meatloaf holds together and is not too moist (it should be the same consistency as meatballs). Place in a glass roasting pan and pour the stewed tomatoes over it. Bake at 350 degree oven for about an hour or until done.

Enjoy! My family loves it. I serve it with mashed potatoes and corn or peas.

1 lb ground buffalo or beef (buffalo is leaner)
sprinkle:
a bit of salt
pepper
some garlic powder and some onion powder on the meat
add 1 egg
mix 1/3 c. flavored bread crumbs (no cheese) with a bit of water and put in with the meat.
add 1/2 can campbells vegetarian vegetable soup
mix everything together and place in loaf pan
pour a can or tomato sauce (not italian) over the meat.
bake covered at about 400 degrees for about 45 minutes.
during cooking i take the fat off that rises to the top.
also, the last about 10 minutes i take the top off. i use tin foil for the top
you can also pace the meatloaf on tin foil before putting the meat in the loaf pan.
it was my mom's recipe and very yummy.

I have posted this one before, I love it:

I don’t do a lot of measuring!! You can’t go wrong though:

One package (20 oz) ground turkey
One egg
Sprinkle with italian flavored bread crumbs about a cup
One can crushed tomatoes
squirt in some ketchup
One can of sliced carrots, mashed a little
French fried onions-the kind for green bean casserole.(again about a cup)
diced red pepper (green too if you like)
diced baby bella mushrooms
Adobo or salt and pepper to your liking

I mix it all up, spread it out in a 9 x 13 glass pan (not a loaf) and bake for 45-60 minutes-broiling the last 10 minutes or so to get a nice browning on top. I usually serve with garlic mashed potatoes just.
This does not come out tightly packed it is so moist and yummy, but will still cut and serve nicely. Everyone loves my concoction.

This is a great recipe for turkeyloaf. My kids love it.

1 pkg. ground turkey
1 egg
1/4 cup. ketchup
1/4 cup. skim milk
3/4-1 cup bread crumbs-seasoned
saute 1/4 cup of finley chopped onion and celery
6-7 shakes of worcheister sauce(not sure of spelling)
1 tsp. ground sage
salt and pepper
a handful or two of shredded cheddar cheese (optional)

mix all ingredients together. put into a glass loaf dish and bake at 350 for 45 minutes. it also makes yummy meatballs as well!

Hi D., I love meatloaf and have had some good recipes over the years. One called for adding a can of Campbells Vegi soup!those vegis are so soft they disappear. Not bad. If you grate some carrot into any mixture you can hide it. My favotite is mixing the ground meat(beef, pork or turkey) with egg, breadcrumbs, mustard and ketchup(or tomato sauce) if you do not want the added sugar. You could add any vegi if you dice it small. Salt and pepper to taste and after the meat is formed I decorate it with some ketchup on the top. Put your loaf up on a rack so any grease will drop down. I mix a box of stove top stuffing into my meatloaf (moisten it with water first) and then add a cup of shredded cheddar cheese....the kids love it, and they don't usually eat anything!!!

Try a pound of ground turkey or beef and add onions and any other diced veggie that you want (if it's a really hard veggie like a carrot you might want to par-boil for a while to ensure tenderness). Add some bread crumbs and an egg, some parm cheese and some garlic powder. Make into a loaf shape and then add a jar of beef gravy (Heinz is good). Either fat free or regular. Then cook for about an hour and towards the end, cover it with another jar of beef gravy. Makes it moist with a delicious flavored gravy. Serve with sweet potatoes and a salad for a balanced meal.

I don't actually have a recipe, every time I make meatloaf, it's a little different. But what I grew up with and still do today is great. My grandma used to grind up any leftover veggies in the food processor and dump them into the meatloaf, anything you have in the fridge is great. I didn't like certain veggies when I was younger, but I always loved my grandma's meatloaf no matter what she used. I know that onions do help the flavor and if they are ground up any little ones won't even know they're there. You might have a little excess liquid, but you can always strain them right after being chopped. You can use one of the bland recipes and add some veggies and onions and it'll be yummy. Good luck!

My Grandma always used ground beef, but I either use beef or ground turkey.
Mix it with finely chopped zuchini, squash and mushrooms. Add frozen peas, a little oatmeal,a little bit of breadcrumbs (sometimes I use flavored; sometimes I just use plain), 1 egg, gralic powder (to taste) and alot of parmesan cheese.(Sorry no exact measurements. I just eye everything)
Place in loaf pan and cover the top with stewed tomatos. Cover with aluminum foil and bake at 350 for 45 minutes. After about 45 minutes drain the excess grease.
Remove the aluminum foil and let it cook for about another 15-20 minutes.

i have always HATED meatloaf for those reasons (and im 32 yrs old)! Anyway, my mom uses the leanest ground beef she can like 85% to cut down on the fat and uses salsa instead of egg to hold the meat together it seems to keep it moist and u get your veggies too!

My mother put me onto those packets (don't know the brand, but I bet they're all comparable) sold in the supermarket that I would never have bought. It's an amazing seasoning mixture that you add into ground beef or turkey...it hung together in a way that I could slice it paper thin. I used lean lean ground turkey and bread crumbs instead of cut up pieces of bread as suggested on the packet. No grease at all!!

I have a great meatloaf recipe and I sneak veggies into it all the time...very simple...
meat, salt, pepper, 1 egg, 1 onion and 1-2 garlic cloves(chopped up), 3 pieces of white bread wet with milk to 1.5 lbs of meat, a lot of grated locatelli romano ( i just grate until there is a lot in there by eye, few squirts of ketchup and I put broccoli puree in mine too. Also after forming into meatloaf coat with ketchup and lay 2 pieces bacon on top.

Beleive I hate to cook, hate to cook and I make this and I love it and the kids eat it up and don't even know there is broccoli in it......hope you try it and like it....let me know.

Looks like you've received plenty of great recipes so I'll suggest a way to make the loaf less greasy. Instead of a loaf pan, I use a baking dish. I shape the meat mixture into a loaf, brush the loaf with a tomato-based sauce and then put into the oven. As the loaf cooks, the grease will naturally leak away from the meat and unto the flat surface of the baking dish. Good luck!

it has lots of veggies and extra for serving, it is a little more time consuming but well worth it. My sister-in-law uses a meatloaf pan, which really helps with the grease. I don't have one yet so I periodically dump the grease out of the pan (carefully) during cooking. I am sure you can use a leaner meat too. Now I am craving meatloaf....Good luck and enjoy!

just wanted to tell you to try using seasoned croutons instead of bread or crackers and ,maybe try deer meat it is really good that way. My kids love it, plus it is not that fatty.

I know one where you ad salsa and cheese. I get alot of recipes from www.kraft.com. You can go there and sign up and they send them to your email for free. You can also do the same for Campbell's, Pace and Swanson. Some of our favorite family recipes come from there. I think it's like 1lb ground beef
1 cup salsa
1 cup shredded cheese
bread crumbs
bake 1 hr 350.

If you go to kraft look up mexican meatloaf.

OK this may sound weird, but add a package of dry sloppy
joe mix. Then you can add onions, bread crumbs, eggs,
whatever ofthr seasonings and some tomato sauce. The
first time my friends husband made it we thought ugh.
Let me tell you it is the only way I make it now.

Hi D.,
You've gotten lots of good ideas and recipes here, but I just wanted to add one more idea. You can add mashed black beans to any meatloaf recipe. Just mash them up with a fork and mix in. They will disappear completely in a beef meatloaf. If you are using ground turkey, maybe choose a lighter colored bean so it will disappear.

I'm sure you'll get a lot of good meatloaf recipes from everyone else, so I'd just like to suggest something else that will make a nice tastey, eye-appealing difference! In the loaf pan, first put a layer of the meat mixture, then a row of hard-boiled-eggs, then cover the eggs with the remaining meat mixture, and cook like you normally would. Let cool a minute or two before slicing. Your sliced portions of meatloaf will have a circle of the hard-boiled-egg in the center, with the meat all around it. Serve with mashed potatoes and vegetable. A really attractive comfort meal! Enjoy!

You're such a busy mom--this idea might help you. Whatever recipe you choose, try making it in a muffin tin. Sounds weird I know, but each "muffin" is an excellent serving size for a child, (2 muffins serve an adult comfortably) and they freeze wonderfully. Plus, because they are small, they release much more of the fat, so it is easy to pop them out of the tin and drain on paper towels. They also cook much faster than an actual "loaf". I always double the recipe and freeze half of the cooked "muffins" in a Ziploc freezer bag. For a quick, easy, and home-made lunch or dinner, it just takes about 1 minute on high in the microwave on a microwave safe dish to reheat them. My little ones love to dip each bite in ketchup. I just made this last week and I put about a half cup of pureed canned pumpkin in there, if you can believe that. Very moist meatloaf and my husband had no idea there was pumpkin in there. (By the way, my recipe is half ground turkey, half ground beef; an egg or two; a bunch of worcestershire sauce; a few squirts of ketchup and/or barbecue sauce; an onion; a handful of wheat germ; a handful of flax meal; a handful of bread crumbs or quick cook oatmeal; and whatever veggie I'm trying to hide, steamed and pureed for maximum camoflage.)

Go the Food Network website and get Rachael Ray's meatloaf muffins recipe. It is great. I have a 10 year old who hates veggies and loves these meatloaf muffins. I sometimes put in even more veggies that she does (grated carrots or pureed anything). It does make them fall apart more easily but they are incredibly moist. We never have leftovers. Good luck!

Are you interested in a Chicken meat loaf?
It is really awesome and oh so easy to make!

One lb of ground Perdue Chicken,
One box of Stove Top Stuffing mix (any flavor you prefer)

Just mix the two together and add perhaps a 1/4 to 1/2 cup of water. You do not want this to be really wet as the meat loaf will turn out soggy.
I have added cooked chopped onion, and I have added finely chopped zucchini too. It just makes it that much better.
I do make my own chicken gravy from Chicken Bullion cubes, but I have also used the jarred gravy too and that works really well also. And don't forget the mashed potaoes and the cranberry sauce.
I will guarrantee you that your whole family is going to absolutely love this. It is like Thanksgiving Dinner all over again.
I hope you try it, you will be glad you did!

You have received so many great recipes and I think I am going to try a few of these suggestions. I wanted to add just one more. Ina Garten had an amazing recipe on the food network site for Turkey meatloaf. She uses 5lbs of turkey so I usually cut in in half or make the whole recipe and divide into two loaves then freeze one. Hers is the only recipe I have actually ever used for meatloaf. Like so many other people I just tend to use what i have in the fridge that day. One thing I do, since I don't use a recipe most times, take about a tablespoon of the meat mixture and cook a patty in a frying pan before putting it in the oven. That way you can adjust the seasonings and moisture level if needed.

Yes! I love Bobby Flay on Food Network and use his Roasted Vegetable Meatloaf with Balsamic Glaze recipe. You can just search for it on the foodnetwork.com website. Of course you can tweak it to your taste but it has always come out moist for me and the glaze is the best part.

I've been making this recipes for years for our church and everyone seems to like it.

2 1/2 lbs of ground beef - (how"greasy" depends on whether you use 80/85/93)
1 c. oatmeal
1/2 c seasoned bread crumbs
2 eggs
1 tsp. pepper
1 tsp onion powder (or 2 tsp. if you don't want to use chopped onions)
1 tsp. garlic powder
1 Tbsp worcestershire sauce
2 tsp. oregano or Italian seasoning
3/4 c mined onions (optional, but need the extra onion powder if you don't use them)
1 1/2 c milk (add 1 c first and see how soupy it is before adding the rest)

Use can also add whatever type of minced veggies you want -- carrots and green peppers work well.

On the top, I add 1 c of spaghetti sauce OR 1/2 c chili sauce and 1/2 c ketchup. If I use spaghetti sauce, I also put parmesan cheese on it.

Bake in the oven at 350 covered for and hour and then uncover it for another 15 minutes.

Hey, D.. My daughter can be very picky when she wants or needs to be. She wouldn't eat traditional meatloaf, so I had to change it up a bit. I use the leanest ground turkey I can find (usually 3lbs), a bag of frozen onions (found they cooked better and didn't have the full "onion" taste my kids hate), big sqeeze of ketchup, 2 eggs, nice handful of bread crumbs and a nice handful of grated cheese. Mix it all up. Spray pyrex dish w/ Pam and I spread it out flat, not loaf oval. Cook in about 45 minutes-1hr. DELISH! I serve it with veggies, a salad and brown rice. My kids eat the meatloaf before anything else. They LOVE it. Good luck.
