What Quick Meal Do You Make for Dinner If There's Little Time???

DH is working tonight and my little one has gymnastics in an hour. My usual "Go-To" meal when I have limited time and food is basically just Egg/Cheese Sandwiches and maybe a veggie. Tonight it's cucumber...other nights it's broccoli or corn or carrots, etc. Some nights I just throw on some pasta.

What do you do that's quick, easy, and edible???

Scrambled eggs with some cheese on top (omelette takes me too long ; ) whole wheat toast and some fruit.

tacos - while the meat is cooking, I cut up the veggies and shred cheese
kraft mac & cheese and hot dogs
I usually keep carrot sticks in the fridge, so they make a quick side dish or something to add to a sandwich

Taco Salad - heat up some canned chili, add some canned corn, crunched up tortilla chips, lettuce, onion, tomato, cheese....throw it all together in a bowl, and eat it up! Oh and don't forget the sour cream!

PB&J was always the quickie favorite when mine were active, even Dad loved a good ol PB&J and preferred it over the standard dinner many a night, of course he was an alcoholic and the reasoning would be that an easy sandwich was fine for him when he was done drinkin' ;)

Chalupas

Heat a can of refried beans with half a can of mild rotel (put more if you like spicier). Put on chalupa shells and bake. Top with cheese, tomatoes, lettuce, avocado and salsa. Eat with a fork :-)

Black bean tacos! Just use a can of black beans in place of the meat. With tortillas, cheese, tomatoes, lettuce, & sour cream - you're done.

I try to keep a few things on hand for easy diner making, either ground beef already cooked and frozen or my new favorite is take some frozen chicken breast and cook them in the crock pot with a can of rotel (mild for me) and any spices, then after it cooks you can easily shred it in the pot and portion it out for future meals, then I can make Tacos, burritos, chicken spaghetti, chicken and broccoli with soy sauce and rice, chili, taco soup, tortilla soup, basically anything with shredded chicken. it is ready to go!

keeping ground beef or shredded chicken (already cooked) on hand (frozen or not) makes almost any dinner fast and easy to make!

Taco Soup

2 cans progresseo minestrone soup
2-3 cans ranch style beans
1 can rotel
1 pkg powdered ranch
1 pkg taco seasoning
1 lb ground beef
2 cans petite diced tomatoes
corn
water (I don't usually have to add much, if any)

I also leave out the corn because it makes me sick. It's yummy, cheap, and quick. Good luck!

Nachos

Fajitas (I buy the precooked, preseasoned sliced chicken fajita meat that you just heat up and add onions and garlic to it)

Pulled pork - buy the frozen kind, unthaw it and heat it in a pan - great for sandwiches

French dip sandwiches (our fav). Buy deli roast beef, put them in sub rolls, add provolone cheese over it and heat in microwave. For the au jus, I just heat up beef broth and sliced onions in the microwave. It's so easy and very satisfying!

I have the same problem as you at least twice a week. My son eats chef boy r d before gymnastics then try to get him a healthy snack after words. it's hard when you are on the go. He even has to do that on his own cause I stop and and he jumps in the car most the time. His class is twice a week for two hours. Those nights I try to get in carbs since hes working out.

I've never made my own meatballs, but I do enjoy making my own pasta, red sauce when it has time to simmer.
But, I ALWAYS have frozen meatballs in the freezer and a jarred sauce that I like. Spaghetti and meatballs is on the table in 30 minutes!

Hard boiled eggs (I keep a few already cooked in the fridge) and a string cheese maybe and an apple/banana. Maybe some crackers.
(That may be more of a lunch on the fly. But we've done similar for dinner before).

Otherwise - maybe chicken nuggets and frozen peas or tortellini's from the freezer with italian dressing on them.

Quesadillas. We always have tortillas and shredded cheese, and plain greek yoghurt on hand and then I add veggies, beans or left over meat.
