Hi!
I am having my daughter's Birthday party soon and am going to be cooking! I will make Baked Mostacholli and Italian Sausage, and I'd love to do homemade Meatballs. Anyone have a good recipe? I'd like to make them ahead and then simmer them in the crockpot with sauce to keep warm the day of the party!

Thanks for Sharing!
L.

My best meatball tip, is...follow whatever recipe you like for flavor, etc. and then BAKE them in the oven at 375 for 15 minutes, if on the smaller side, 20 if on the large side.

I used to hate making meatballs b/c of standing in front of the stove for so long. No I pop them all in the oven. Perfecto!!

I always get compliments on my meatballs and requests to bring them to parties AND my 2 year old and 3 year old eat them, which is surprising because they are the pickiest eaters. If I'm making cocktail meatballs, like in the crockpot, I just use the frozen ones that come in a bag. But I always make my own when I make pasta. Anyway, my recipe is 1/2 pound of gr. chuck, 1/2 pound gr. veal and 1/2 pd of gr. pork, 1 egg, fresh parsley, fresh thyme, fresh garlic (I use a garlic press and press about 3 cloves), a few slices of italian bread soaked in milk then broken up and put into mixture, salt and pepper, and the most important, Pecorino Romano cheese (about a handful). Mix everything, form meatballs, brown in pan (optional), then bake for 30 min in 350 degree oven. Hope you try them!

From Martha Stewart's show years ago...

1 ½ lb. ground top sirloin
¾ lb. ground veal
¾ lb. ground pork
Fresh parsley, chopped
2 T extra virgin olive oil
2 cloves of garlic, pressed
½ c romano cheese
3 eggs, beaten
¾ c unseasoned bread crumbs
Pinch of salt and pepper
1-2 large pieces of fresh panella bread (Italian)
¾ c olive oil

Mix meat, parsley, 2 T olive oil, garlic, cheese, eggs, bread crumbs, salt & pepper together. Wet bread with water and tear into small pieces. Add to mixture. Roll into equal sized balls. Place meatballs onto parchment or wax paper lined surface. Heat oil in large non-stick pan. Brown meatballs for 15 minutes or until golden brown. Remove from pan. Place onto paper towel lined surface to drain. Add to tomato sauce and simmer.

I find it easier to bake the meatballs. Less time and mess!
Another great meatball is Ikea's Swedish meatballs but not the best for Italian fare but great as an appetizer. So very easy and tasty. Now I want to make some meatballs too!

My favorite is Lion House Sweet and Sour Meatballs. I serve them over oven steamed rice and it is always a big hit at my house or anyone's that I take them to.

I always double the sauce, I often will use a cheap HB meat due to it having a much better flavor, so I cook them a while then drain the fat off and then put the sauce on.

There are some variations on the recipe so I'll post a couple of links.

My husband is the cook in the family (I'm the baker)... He uses ground turkey and adds chopped spinich. Sooooooo good, lower in fat and kids can't find the hidden veggies. He bakes them too.

My famous meatballs don't really have a recipe- no measurements, anyway- but I will give you the ingredents as close as I can approximate to measurements-
I use
1 part ground pork to 3 parts ground beef- makes them super moist-
add 1/2 cup parm. cheese, 1/2 cup bread crumbs, an egg, a few teaspoons of garlic powder and salt- I brown them and then simmer them in the sause like you said- mmmm delicious!

Don't have a good recipe.
I cheat and buy Gordon Food Service meatballs because they are GREAT. I make most things from scratch, but not my meatballs.
