I am looking for recommendations for swimming lessons in San Antonio, TX for my 7 month old.

Love to Swim School, you can google it, they have two locations. They were rated number 1 in San Antonio by parents. I work there and have been involved with swimming my whole life. It's the best program I have ever seen. I use what they have taught me on all four of my kids.
If you actually want aquatic survival skills, then you need to check out infantswim.com There are two certified instructors in San Antonio. Beginning at 6 months of age, the child learns to orient themselves in the water and float on their back until someone is able to get them out of the water. Beginning at 12 months, they learn swim-float-swim sequence. My daughter just finished the classes and it's really amazing!
Actually, you are looking for a "Mommy and Me" water program that teaches you to play safely in the water with your baby. The customary min. age for swim lessons is 3 or 4.
You need a very, very warm water pool to play in with an infant.
