I am looking for so good cookie ideas. Each time I make Chocolate Chip cookies from the back of the package, they come out different and I follow the directions exactly. I am interested in baking some good Holiday (Halloween, Thanksgiving and Christmas) cookie recipies. Anyone have any ideas?

I don't have a special recipe, but I LOVE allrecipes.com
The recipes are reviewed, so you can scan through and get an idea of what to expect, what to change, etc...
And you know if 484 people rated a recipe almost 5 stars - then it's worth trying ;-)

Hi L., I've used a bunch of these recipes. I received this LONG email with every name of every cook, and it basically brings you to this site... http://www.northpole.com/kitchen/cookbook/
A lot of conditions can change a cookie recipe (age of eggs, flour, temp in the house, etc.) Don't beat yourself up, it happens to all of us. Do you like Annisette cookies, if you do email me directly and I'll send you my family recipe. Good luck... C. (____@____.com)

Super Super Easy and good for you too. My friend got this recipe when she was on Weight Watchers. They are sooo good and couldn't be more simple. Seriously, this is all you do....
We call them Pumpkin Spice because the ingredients are a can of pumpkin pie filling and a box of spice cake mix. THAT'S IT!
Mix, spoon out (they cook in the same size you spoon them out so make them flater rather than rounded). Bake @ 350 for 9-12 minutes. Sprinkle with Powdered Sugar. Great Holloween through Christmas. Everybody will love and want the recipe.... you decide if you want to share your simple but super secret! (I made so many last year, we got sick of them!)

Here's my favorite, it's great for Halloween because of the orange pumpkin with the chocolate chips:

Pumpkin Chocolate Chip Cookies
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ginger
1/2 c. butter
1 c. sugar
2 eggs
1 c. pumpkin
2 c. chocolate chips
Beat butter, sugar and eggs till fluffy. Beat in pumpkin. Then beat in dry ingredients just until combined. Stir in chocolate chips.
Drop by tablespoonfuls, two inches apart, onto greased cookie sheets.
Bake at 350 F, 12-15 minutes, or until golden. Makes about 3-1/2 dozen.

To get our cookies nice and fluffy we use an extra egg. If it says 2 then use 3 and they will turn out nice and fluffy like they look on the package. As far as recipes they are all in storage because we have moved.

One trick for the chocolate chip cookies is that I add a little extra flour. They don't flatten out as much and taste great! Don't overbake to remain nice and chewy.

Our favorite Christmas cookie is Cream Cheese Cookies, dipped in chocolate. As far as my husband is concerned, the only cookies I need to make are these...and plenty of them. He and our son help with the chocolate dipping each year. It's a fun ritual. Plus, they know the more they help, the more cookies I'll make. This recipe is so easy and gets lots of compliments with friends, too. It's great any time of the year!

CREAM CHEESE COOKIES

CREAM TOGETHER:
2 c. butter
8 oz. pkg. cream cheese
2 c. sugar

MIX IN:
2 egg yolks, one at a time
1 t. vanilla
4-1/2 to 5 c. flour

BAKE AT 375º, 7-10 minutes.
Makes 8-9 dozen small cookies.

Melt 12 oz. bag chocolate chips in double boiler. Dip one end of cookie in chocolate. Place on waxed paper till chocolate cools/hardens.

NOTE:
FOR BEST RESULTS—hand roll & flatten each cookie (less edge browning)
FOR STIFFER DOUGH—add more flour (maintains shape more)
DON’T LET CREAM CHEESE GET TOO WARM—will cause cookies to flatten too much
Works well with cookies presses, too.

P.S. My mom used to break the dough into three batches--one plain color, one with red food coloring, and one with green. It dresses them up a little for Christmas. We just skip the colors in our family, though. I guess I'm not a pastel person and the food coloring just makes them pink and light green. It was fun when I was a kid, though.

Enjoy!

I have the same problem. One thing I've noticed is that your butter has to be COLD when you add it, not softened like they say. Cut it up into tiny chunks with a knife as you add it to the batter, so it'll mix better. And most importantly, chill the finished dough before you use it. This way the blobs of cookie dough stand up tall on the cookie sheet, they don't flatten out, which is the problem I had when my butter and dough was not chilled. To save time, you could mix it up, and shape it into 2 waxed-paper logs, and chill them for a day or two. Then you have homemade slice-and-bake cookies. I like to do that for our kids, I give them each their own chilled "log" and a butter knife, and they get to slice and put them on the cookie sheet. Good luck!

I make choc.chip rolo cookies. They are delicious! You can use homemade choc chip cookies or the precut ones in the refrigerated section. Let the dough soften a bit and just press a rolo into the middle of the doughball and make sure it is hidden inside and covered fully with dough. Cook them the same way you would cook the cookies plain. When you take them off the pan let them cool upside down on a paper towel or else the caramel sticks to the towel/plate. When they come out they look like regular choc chip cookies, but when you eat them they are filled with caramel. They are always a favorite!

My own recipe - I won 3rd place in a baking contest w/this one (I have no measures, you'll have to go by sight!)

Sugar cookie mix
apples
kraft or Werther's chewy caramels (I used Werthers)

Cut the caramels into small pieces
chop/shred the apples in a food chopper

Use the sugar cookie mix that comes in a pkg., following the directions for the mix. To that, add fresh shredded apples into the mix(your choice). When you spoon the mixture onto your cookie sheet, press a piece of caramel into the center of the cookie and bake till golden brown.

These are some of the most delicious caramel-apple cookies!

Enjoy!

Sometimes, I too have to add more flour if the batter is thin-like. I also have to adjust my oven. It is an older one and if it is heated up for a bit then it seems to get too hot...so I ahve to make some adjustments along the way.

Magazines often print holiday cookie recipes and even devote entire issues. Maybe check your local library to see if they have any from previous years, or wait to see what comes out (or maybe they are even already out now). Also, on-line you can find interesting recipes through epicurious.com.
