Recipe Using Ham

OK, over the weekend while we were out of town, a fuse went out in our garage and turned our freezer off, and some items defrosted too much to refreeze. Included was a large section of ham, like a spiral cut ham. I need to use it this week so it doesn't go bad. Does anyone have some recipes that involve ham? I don't want to just fix "ham", and I want a recipe that uses a lot of ham if possible (not just small amounts to garnish). Thanks!

This is an old family recipe and it came from the Pennsylvania Dutch area. It is a family favorite and hopefully you will like it to. It is called Ham pot pie...not sure why because it is not like what you would normally call pot pie. You actually make your own noodles which is really easy to do.
Take ham and cut up into small chunks Take bone off of the ham and put it into a pot of boiling water. Let simmer for awhile to make broth. Add the ham and prepare the noodles.
Take out the ham bone
Noodle recipe: (I usually double the recipe because I like lots of noodles and also I let the kids play with any extra dough like playdoh
2 cups of flour
one egg
1/2 a cup of milk
Two tablespoons of melted butter
Mix together. Roll out dough to desired thickness. Use a pizza cutter and cut into small rectangles. Pick noodles up and drop into boiling water one by one. Boil approx. 20 minutes. Add salt and pepper to taste.

This is delicious and reminiscent of Cracker Barrel. I used leftover Christmas ham, baby red potatoes, peas, and corn. Since the potatoes had been roasted with dill, I omitted the parsley. Instead of processed cheese, I used the grated pepper jack and sharp cheddar I had on hand. The recipe yields 5 servings but can easily be doubled.

I use cooked instant mashed potatoes for these. If I use garlic-mashed potatoes, I omit the garlic powder. When I use pepper jack (my favorite), I omit the parsley flakes.

Potato & Ham Cassarole

1 package frozen hashbrowns (square cut, the one with diced peppers is good too)
1 family size can cr. mushroom soup
8 oz. sour cream
diced green onions (save enough green to sprinkle in top)
1/2 c. butter
1/2 c. milk
diced ham (I use 2 can ham)
1/4 tsp garlic powder
s/p to taste
2 c. shredded cheese

Mix all but 1c. cheese and gr. onion for top. I place it in a large bowl and microwave for a few minutes and stir it so it mixes better. Usually 2 times. Then put in greased cass dish. Bake 350 for 35-40 min. 20 min in, sprinkle the cheese and onions on.

We also do this with bacon bits, I've added velvetta, chicken soup instead of mushroom. The possiblites are endless. hth :) K.

Green eggs & ham - I just made this for breakfast the other day for my kiddos and they LOVED it......chop up the ham into small chunks, add to scrambled eggs, add a small amount of green food dye to the eggs and that's it!
It's delicious......good luck!

Hamburger Helper Italian Cheese flavor (or your favorite flavor), add frozen veggies (peas and carrots work well) and chunks of ham instead of hamburger meat. Cook it like you would normally cook Hamburger Helper.
You could also make thin slices to use in sandwiches for your lunches.
Homemade pineapple and ham pizza.
Cooked elbow noodles, frozen mixed veggies, chunks of ham tossed together with light mayo and Italian dressing.

Ham & Egg "Quiche" (or as my kids say... Ham & Egg Pie)

1 pie crust (store bought)
1 cup ham, diced
1 cup cheese, shredded (your choice, we use fiesta blend)
4 eggs
1 cup milk
salt & pepper to taste

Place pie crust on a cookie sheet (easier to transfer to oven)
Spread ham on bottom of pie crust.
Spread cheese on top of ham.
Mix rest of ingredients well and pour on top of ham.
Bake at 350 for approx. 45 minutes.

I usually make 2 at the same time. Breakfast, lunch or dinner. Great with fruit on the side.

Ham and cheese potatoes... I use Pioneer package gravy packets, the "country" or "pepper" gravy packet, if you are making a lot, use two... follow directions on them and add velvetta cheese... I would use at least 1/3 if not more, to taste...
Before I make the sauce I peel my potatoes and slice them and boil as I'm making the gravy... I don't let them get all the way done... I dice up the ham put it in a large baking pan, pre-heat the oven to 350... dump the potatoes in, add the cheese sauce, mix up... Put foil over it and cook for 30-45 min.

-Make spaghetti pasta a set aside
-Beat 3 eggs and 1/2 cup milk (I like 2% or whole) together with a little pepper
-Slice desired amount of ham into cubes in cook it in a pan. Turn the heat down to medium, add the pasta and pour the eggs mixture over everything. Toss it in the pan for a few minutes until its no longer wet or runny.

My hubby likes lots of meat so i use a lot of ham but its up to you. It's such a good, quick and super easy meal and great for the summer. Let me know what you think if you try it! :)
