Opinions on Steam Canning Vs. Water Bath Canning?

My big old canning pot is out of commission and I'm deliberating on whether to replace it with a steam canner... any thoughts? Is it just as straightforward as water bath canning and will all my old recipes work the same?

Your old recipes will all work in a steam canner. And you will be able to can lots of stuff that you cannot do with a water bath. With a water bath canner the food has to have a high acidity, like tomatoes, pickles or fruit. You may can veggies in a steam canner. I still like the waterbath method. Very low tech and I freeze veggies for a higher vitamin retention. Steam canning is faster, however, so if you want to do batch after batch every day that would be a consideration. I put 1 batch on to can about twice a week. Not worth the added expense for me.

Yes, it will work the same. From my experience, it's a little faster as well. I am a huge fan of the steam canner.

I use a boiling water canner. I love it, and I make jams, tomato sauce, peppers, veggies, pickels, salsa.. etc. I love it, and It also doubles as a massive cook pot if you need to prepare tons of a particular canning recipe like I did for my most recent batch of strawberry jam. I havent found any faults, and it is cheap and simple and almost no chance of pressure explosions that can happen with a pressure canner.

I don't have much experience myself, but my mom used a steam canner and it worked great for her.
