Looking for Red Beans & Rice Recipe

Does anyone have a recipe for Red Beans & Rice? Preferably something quick & easy. My family LOVES the Zatarain's box mix, but I've recently started reading labels and noticed the obnoxious amount of sodium in the mix (though it is fat free!).

I would really appreciate it if someone has a great recipe to share.

So What Happened?

You ladies are awesome! I have looked at different websites, but I have no idea what goes into the ones I like (guess I could have looked at the ingredients on the box!). Thanks for the suggestions. I am really looking forward to trying out some different recipes. This is a favorite cold-weather dish in my house and the Zatarains version is fat free, which is very important to me right now as I try to eat healthier myself & get my family on the bandwagon. =o)

My parents are from Puerto Rico. So....red beans and rice is something I make often and it doesn't take more than 30minutes. Do you have an email I can shoot the recipe too.

Bush's pinto beans in the can are good...just season them to your family's taste (onions, spices, etc.), add sausage and cooked rice.

If you want less sodium, use turkey instead of pork (maybe a smoked turkey leg), and use sea or kosher salt instead of the regular table salt. That has way too much sodium. Add a little ginger to make it less "gassy".

Hi D.,

I got this recipe off of cooks.com and we love it. I modified it a bit by putting 3 cut up slices of bacon instead of salt pork and crushed red pepper instead of red pepper. Also I would boil your beans in the 3 quarts of water and add a can of coke/diet coke to release the gas. It seems like alot of trouble but it really isnt and it makes a ton! Let me know how it works out. God Bless!

RED BEAN 'N RICE
----------------

1 lb. red kidney beans, rinsed & drained
1 slice of salt pork
1 or 2 med. sized onions, chopped
2 or 3 cloves garlic, minced
1 tsp. coarsely ground black pepper
3 qt. water
1 tbsp. salt
1/2 tsp. red pepper
1 lb. smoked sausage (or Kielbasa), sliced, sauteed &
drained

In a large cast iron Dutch oven or crock pot, bring all
ingredients except sausage to a boil. Simmer until beans
are soft and liquid is thick. (If using a crock pot, set on
high for 4 to 5 hours.) Stir in sausage and cook an
additional 30 minutes. Serve over hot rice. Top with
chopped green onions. Serve with hot corn bread.
