My daughter just turned 27 months old. Does anyone have any fun craft ideas I can do with her?

It ALL depends, on her dexterity and fine-motor skills. And safety.
Can she for example, glue things? Cut with scissors?
Does she mouth small objects or not?

You can use, Glue Sticks, egg cartons, pom-poms, popsicle sticks, paper plates, twigs, beads etc.

Just glue anything together.
It does not have to be a 'literal' replication of an object.
It is just for fun.
Let her just create anything.... just by gluing things together. And let HER, tell you what she made.
That promotes, creativity.
Don't for example, tell her "let's make a dog. This is how..." And do it for her. Let HER make it and glue whatever together. The best she can. It is not about how 'perfect' she does it, but that she enjoy 'creating' just stuff.

Or, cut out pictures from a magazine. Then let HER glue it on construction paper. Teach her how to use a Glue Stick.
Glue sticks, are easier, for kids to use at this age.

Again, it is not about how perfect, she replicates an object or not. It is about... promoting creativity, and letting her mind come up with something. Even if it is just whimsical or pretend or made up.
She can create, her OWN.... object.
This fosters creativity and problem-solving, too. And fun.

1. Stickers and crayons on colored paper. This way they can even see a white or yellow crayon draw....

2. Toilet paper in water and glue. Stick it to toilet paper tubes etc and make animals.

3. play dough and play dough

4. simple sticks and leaves etc from nature walk...paste them on paper to make a picture, or put paper down on leaves and shade over to see the impression.

Take her to the park. Let her find leaves, sticks, feathers, little acorns.
My kids liked gluing them on paper plates.
You can get thicker plates, cut out the centers, let her paint them. After the paint is dry, you can help her glue on her treasures. They make really cute "wreaths". You can let her use glitter pens to decorate them as well.

Get different colored macaroni and let her string them on yarn for necklaces.
One year for Christmas, I got poster board and traced my kids's hands. I cut out a bunch of them, spray painted them gold and let the kids decorate them with little jewels and glitter. I puched a small hole through the top of the middle finger, threaded a white ribbon and we gave them as ornaments to all our family members. They were really cute.

Sidewalk chalk is always fun! So is shaving cream--let her sit at an empty table and put some shaving cream on it and let her go crazy! It washes clean and for some reason kids love it!

1. Hand print art (butterflies with hand print wings)
2. Stickers- especially foam that are easy to manipulate
3. Get an easle, one with a dry erase side. Draw letters on the board, then help her trace the letter with her finger to make it disappear
4. Use food to fingerpaint (cake mix, melted cotton candy, pudding) while talking about the texture
5. Wrap something in tin foil to make a "space" object. Water bottle = rocket (add construction paper wings and stickers). Rocks become moon rocks
6. Paper plate masks
7. Color books- you each get one page. Draw together. Ask her what colors you should use.
8. Water painting- on the sidewalk or on one of those special mats. Watch the art disappear
9. Make an instrument- toilet roll trumpet. Coffee can drum
10. Play dough- make it at home with food coloring or buy it. Make animals for her or help her learn to make snakes and snowmen
