Hello Ladies. I have a request. Do any of you have any easy recipes? I work part time and I have a 4 month old son. I am looking for good quick recipes to make in either the crockpot or quickly in the oven (particularly things made with ground beef - besides for burgers, meat loaf, and meatballs, I have no good ideas!). I usually make dinner every night, but am running out of unique ideas! Also do any of you have any recipes for homemade baby food? I plan to start my little guy on it soon and I want to make my own (no jar stuff). Any advice would be greatly appreciated! Thanks in advance!

Thanks everyone! Those are all some great ideas! I will definately check out that book for baby food too. I did go back and look at previous posts (I guess I should have done that first!) and found other ideas for crockpot recipes - thanks Pam. I am going to go shopping today and get some of those ingredients. Thanks again! You all are SO helpful!

Hi K.,
I completely understand your situation! For the crockpot, I recently stumbled into a great chicken recipe. I was just throwing stuff in as I went along so I'm guessing at measurements as I did then. The following yielded enough to feed my 2 year old, my husband and myself.

3 frozen skinless, boness, chicken breasts (just dropped them in)

On the stove(although I don't think it was necessary at all):

1 Tbl. butter
2 Tbl. lemon juice(in the bottle)
2 tsp. jarred chopped garlic
1 cup chick broth
1 tsp. oregano
salt and pepper

Brought the above to a boil and poured it over the chicken(already in crockpot). then I poured in a splash (maybe two) of white wine. This was the key!! I cooked it on high for three hours but next time I will do it on low for 6-8 as there was more than enough liquid remaining. I served it over rice with green beans but if you wanted you could really throw potatoes in the pot with the chicken. It was so good I am making it again this week!

The other advice I have is to go to epicurious.com. You can search by ingredient and then narrow your search by prep and cooking length. It has been a huge help to me. Check out:

Creole chicken and okra gumbo
Grilled tuna with herbed aioli

Both are soooo good! I know this is getting just a tad long winded but I also think a lot of people forget you can eat eggs for dinner. Throw in some veggies and cheese and you're done. Add rice topped with jarred marinara on the side and you've got a complete meal. I hope this helps. I just reviewed your question and realized you are more interested in ground beef but will send this anyhow. We only eat beef once a week or so but when we do, taco salad in the bowl shell that you bake in the oven for 10 min. is our fave. Happy cooking!

The best cooking magazine ever is called quick cooking. I believe it is a Better Homes and Gardens magazine. The recipes are summited by real people and most are under 30mins. The best thing about the recipes are they use real ingredients. Most of the stuff you will already have in your kitchen. Check out the website. quickcooking.com

Check on the Kraft website. The have a free magazine and tons of fast ideas. I use this often. There are also some cooking mag geared toward your request like Quick Cooking.

hey K...Hi!! are you keeping warm???

you know.. someone else requested crockpot recipes and if you check the past postings.. there were some good ones as I recall.. how are you doing?? how bout those bears??
I like to use those frozen chicken breasts.. tyson.. I believe somebody wrote down a recipe for that.. I just made it.. something with cream of mushroom soup or something.. and I also brown ground beef and throw in a couple of jars of spaghetti sauce.. that is always good too.. let me know if you find that posting.. I will look right now..

Chinese casserole
Brown 1 lb ground beef with onions and celery chopped, I add about a cup of each and drain. Also a can of sliced water chest nuts.
Add to a big pot with one cup rice, soy sauce to taste, and a can of cream of mushroom soup and cream of chicken soup with two cans of water. Bake at 375 for one hour or until thickened, stir occasionally.
This is a old family recipe and is good for leftovers too. Eat alone or serve with garlic bread.

As far as recipes for the baby I would recommend buying the book "First Meals" by Annabel Karemel. It is awesome it has recipes to make homemade babyfood as well as meals as they get older.
For the husband... I would make stew in the crockpot. I try to keep groud beef frozen so I can always make spagetti. Also, I buy the stouffers lasagana or casseroles and those are good to take out. Last weekend I make a turkey on Sunday and that gave us an extra meal of hot turkey sandwiches as well as lunch for me and my husband. I have more ideas if you want message me

There are 2 recipes that I like for quick recipes.

The Allrecipes website is cool because you can save your recipes in a recipe box and print out shopping lists.

My favorite quick ground beef recipe is cheapo stroganoff:

Brown ground beef with some garlic mushrooms and onions.
Meanwhile mix 1 can of cream of mushroom soup (the 98% fat free works great, about 8oz sour cream (again light works great), and steak sauce (or worcheshire) to taste. Add milk to get to the consistancy you like.

Add sauce to the ground beef and simmer.

Serve over rice, egg noodles, or mashed potatoes.
