I am trying to bake a cake for my son's 1st birthday but am having trouble finding a good recipe due to his allergies. It has to be dairy, wheat, egg, and nut free! Anyone know of any recipes?

I bought allergen free cake mix and frosting, for my son's birthday. No one knew the difference :) Everyone thought, that it tasted great!

You can make a regular cake for (almost) everyone to eat
and upon which he can blow out the candles.
You can make a separate small cake just for him.
Or a separate small something for him.

Check out the website for Nourished Kitchen. I am not sure they'll have something without everything you listed, but I know I have seen gluten-free recipes there. Sorry I don't have the exact url. Good luck!

If you are stuck, call around to the local bakeries. Because these allergies are more common now, many bakeries will be prepared to bake up a delicious creation to your specifications! It may be a bit pricey, but at least you know it will taste good.

1 1/2 cups semisweet chocolate chips (check on the dairy issue - can you get dairy free chocolate? Don't know)
2 cups (19 ounce can) cooked chickpeas (garbanzo beans), drained and rinsed
4 eggs, or 1 cup egg substitute
1 cup sugar
1/2 tsp. baking powder
1 Tb. powdered sugar
In small bowl, melt chocolate in microwave oven, 2 minutes on medium power. In blender or food processor, combine beans and eggs. Add sugar, baking powder and chocolate; process until smooth. Pour batter into non-stick 9-inch heart-shaped or round cake pan. Bake at 350 degrees for 45 minutes or until a knife inserted comes out clean. Cool. Sprinkle with sugar. Cut in 10 wedges. Serve with raspberry sauce.
Quick Microwave Raspberry Sauce
1/2 cup seedless raspberry jam
2 tsps. fresh lemon juice
1 pint fresh raspberries
In a bowl, microwave jam until melted,
1 minute. Stir in juice and berries.
Per wedge with sauce: 318 calories,10g fat (4.8g saturated), 56g carbohydrates, 2.8g fiber, 5.8g protein, 116mg sodium.

I found this recipe when I googled. I think if you google enough- you can find something that will work! You could even add a fruit layer or something to add something special to it. ;)

We have used Pamela's Products with wonderful success. http://pamelasproducts.com/Allergy.html

To replace the egg, I purchased a box of Egg Replacer by Ener-G. http://tinyurl.com/2f73trg The box lasts a long time as you use very little in recipes. I used this for bread, cakes, you name it.

I know how hard it is to cook/bake for someone with allergies. We have Celiac Disease in our family. Best of luck & tell the little guy Happy Birthday!

Try the Cherrybrook Kitchen mixes. They are a bit more expensive ($6.99 or more per box) but definitely worth it! They are egg, dairy, gluten and peanut free.

You can find recipes on the Internet. Google the phrase you wrote here. Look at sites that state just one or two of your criteria in the google response because you may find a more inclusive recipe. Just takes time to do the research. Boring, I know.

I suggest you can make such a cake using an alternative flour with a recipe that's not wheat free but is dairy and egg free. A gluten free site will tell you how to substitute flours.

I have dabbled in cooking/baking for her so that she feel included in our meals and have only had GREAT success with Elana's website & cookbooks. Very simple, straightforward and quick! Hope you are able to find something yummy! We made b-day cupcakes (with egg substitute) from her site for my little ones 1st B-day so mom felt included and no one knew or could tell that they weren't the real deal which is very rare when cooking/baking with such restrictions.
