Hello! I am tired of the same old meals we have been having for breakfast and lunch. I would appreciate any healthy ideas for a toddler {and myself!} Thanks so much!!!

Breakfast:

yogurt or go-gurt tubes for the kids
fruit
bagel
break an egg into a cereal bowl, whip it up with a fork, add some pepper & a little salt if desired, or I like Tastefully Simple's "Bacon Bacon" seasoning (it's soy, but yummy w/onion & seasonings in it, too). Microwave for 60-90 seconds, then microwave a tortilla for 10 seconds. Put a slice of cheese on the egg when it's waiting for the tortilla to warm... wrap the egg into the tortilla
Egg like this is also great on a bagel, but that's a lot of bread.
Hard boiled eggs great on a slice of buttered toast

Lunch:
any of the above, plus
grilled cheese, especially with fresh tomatoes coming soon... yum!
when tomatoes are in season, you can slice one with some fresh mozzarella cheese & drizzle w/TS Balsamic & Basil Dipping Oil
that oil's fabulous on any grilled or roasted veggies, too. Cook lots, and enjoy the leftovers either warm or cold on a crusty roll with a slice of provalone, or make a grilled sandwich with them, like a panini.
that oil's also great to sautee your shrimp, or chicken when you're making stir fry.

But I digress... that's more "dinner fare" than lunch!

Oh, one more awesome breakfast idea, also TS.

Use the Bountiful Beer Bread mix, prepare as directed using a beer or a Sprite.
"scramble" 8 eggs or eggbeaters in the microwave.
Thaw some Morningstar "sausage" patties, and either break them up with your fingers or cut into pieces.
Mix the scrambled eggs, "sausage" and pepper into the Bountiful Beer Bread batter. Spoon into muffin tins & bake. When done & cooled, pop into a ziplock & freeze. Take out & microwave/thaw & heat & eat. YUM. These are a family favorite. In fact, my husband works late 3 nites a week, so will pop one in the microwave when he gets home from work at nite!!

There are thousands of free recipes online to download, and there's a great search feature, for example, you can type in "eggs" and highlight "spinach & herb Mix" to see all the recipes for using eggs with that seasoning. You can narrow the search further by highlighting the meal you're interested in, in your case lunch or breakfast.

Dear B.
My children and I loved the homemade breads that I made the night before and had it timed to be done by 6 AM. What a great way to wake up in the morning smelling the homemade bread. The bread machines are easy to work and it doesn't take much preparation time, the night before ....just make sure that your yeast is good.
I liked to make scones in the morning, because you can use all the fresh berries as a variation.
On hot days, we would just have the strawberries and whipped cream in the morning....who can eat heavy on those days.
Nutritionally speaking, however, I would highly recommend Jane Brody's Cookbooks as she has great explanations about nutrients, studies, e.g."In another study conducted in the University of Kansas Medical Center, absorption of dietary iron was significantly increased when soy protein or whole soy beans were eaten along with Vitamin C (the amount found in about 6 ounces of orange juice). If this is the type of cookbook for wholesome eating that you would like, you will not be dissapointed with her great-tasting recipes.
Lunch time could be different cookie-cutter sandwiches, all-natural hotdogs (from the Pennsylvania Dutch, or privately owned meat suppliers), or different humus (soy bean pate)on pitas or crackers. I hope that this was helpful. E.

For breakfast M-F we have cereal and fruit. I only buy healthy cereals, but they can pick from what I have in the pantry what they want for breakfast. For myself, I like Wheat Chex and Go Lean the best. I try to have a varriety of fruit on hand so it doesn't get too boring for me, the boys (5 and 7 years old) could eat the same thing all week no problem. As for lunch, the boys aren't interested in varriety, either. I will often give them left overs for lunch if I have enough for both of them. My oldest could eat an American cheese sandwich on whole wheat bread almost every day. I usually pack fruit or a veggie with their sandwiches for day care. As for myself, some times I have left overs for lunch, or a sandwich and fruit. Cottage cheese and fruit or yogurt and fruit are healthy easy choices too. Hope this helps.

we love to eat veggies and spinach dip out of a bread bowl. you can make the dip with a dried soup mix, like knorr or lipton, the recipe is on the package and add a frozen chopped spinach "block" from the freezer section. we usually use pumperknickel or a hearty round loaf that we hollow out and cube. you just have to prep it a few hours or the day before so the dried veggies get soft.

Hi B.,

I am also a SAHM/WAHM and lunch ideas are always something I am trying to figure out. My kids seem to get bored easily. They all really enjoy English Muffin Pizza. I get the mult-grain - Light English Muffin and then top with a little pizza sauce and cheese, sometimes we even do some diced green pepper and onion. The kids find them fun, for me it is quick, easy and nutritious.

B., you did not tell us what you usually serve.

We take a picinic lunch with us a lot. My daughter loves hard boiled eggs (and they are great on the run) cut into slices with one of those slicers. Fruit and cottage cheese. yogurt. mac and cheese.

I just made our menu for this week, so here it is:

Breakfast (with milk):
Whole-wheat blueberry waffles
Yogurt and banana
Cereal
Banana bread (with PB for me)
Scrambled eggs and bacon

Lunch (with milk or water):
Dr. Praeger's spinach "burgers" (at Whole Foods) with roasted beets
Dr. Praeger's broccoli "burgers" with cooked carrots
Grilled Cheese (with pumpkin puree) and banana
(He's in daycare 2 days, so I'll have soups and salads those days)

Looking at this, I realize we're a little short on the green veggies, but i try to get some in at dinner. And really, whose toddler eats all the green veggies he should?!?!!? :-)
