A Good First Birthday Cake

I was wondering if anyone out there had a good recipe for a first birthday day cake or cupcake. My son has a sensitive stomache and still spits up after he eats. Is there a recipe out there that is a little (or alot!) more healthy than a cake with alot of sugar, sugary frosting and lots of butter? I was still going to buy a regular cake for our guests but I thought I would make him something a little bit healthier and easier on the stomache.

What can I do next?

Hi! I don't have a specific recipe, but you could try replacing the oils and most of the sugars w/ applesauce or his favorite jarred baby fruit (or even carrots or sweet potatoes if he can handle that). To prevent him from overindulging, you could prepare his cake in mini-muffin tins, and instead of frosting there are products like no-sugar-added apple/pumpkin butters, too. Try visiting/googling recipe websites for ideas!

You might try replacing the milk in a cake recipe for soy milk. I can't tell the difference when I bake with soy milk. There are some great cake mixes at Meijer that are free from allergens. The are called red barn or something like that. There cakes are great. You can also replace eggs with bananas or applesauce. I am not sure about replacing sugar, but google dairy substitutes, there are a lot of different ways to replace eggs and milk. If your son has a very sensitive stomach, you might try taking milk away all together. I have made a meatloaf with applesauce instead of eggs and it was pretty good. A little sweeter than your average meatloaf. I have had to make all of my daughters cakes because she has a milk allergy. The cake mixes from meijer are a nice break from having to homemake the whole thing. Good luck

How about Angel Food Cake - perhaps frosted with cool whip? Still sugary, but maybe easier on his belly?

You may have already gotten a cake, but for my daughter's first birthday I made the "1st birthday cake" in the back of the "what do expect the first year" book (a sequel to "what to expect when you're expecting"). It is a no sugar cake, using cooked carrots, and there is a cream cheese frosting w/raisins for a frosting. It is labor intensive, but was really good and she liked it. (so did my husband!) We didn't give my daughter any sugar until she was almost 2. she didn't miss it.
hope this helps!
