Stuffed Bell (Green) Peppers

I am wanting to make stuffed bell peppers. I am looking for an easy recipe for this, but will take any.
For some reason I am craving this but not sure how to make it.

Evidently stuffed peppers are historically a Greek thing - I found a really good recipe for them at allrecipes.com
When I made my own, I kinda flew pretty far away from the original because I have a knack for creating new recipes (just never good at writing them down). I used basmati rice, local-grown ground beef, a big handfull of parsley from my garden, fresh spinach, and a very interesting spice blend. I used this mix to fill not only bell peppers, but also a large chili pepper and tomatoes (I'm highly allergic to peppers - they were for the hub). The tomatoes were delicious and the kids scarfed them up too. Everything was precooked and cooled before it went into the hollowed veggies (You can also make this beforehand and freeze it. I even made oriental dumplings with the extra!) I put them into a pyrex dish and cooked on the grill to keep the house from overheating (and from going into an asthma attack from the cooking peppers). Just use a little foil if you have anything that doesnt want to stand upright, or make a pocket for spicey peppers if you dont want the sauce mixing. I made a catalina dressing - also on allrecipes.com - and used that both in the mix and on top afterward. It was delish! :}

I brown extra lean ground beef with onions, garlic, and a chopped tomato. I don't use tomato sauce because for me, tomato sauce causes the tomato to overwhelm all the other flavors. I season with salt, cayenne, and oregano, basil, and paprika to taste, and mix with cooked rice.

Hollow out the peppers and blanche them by dropping them in boiling water just long enough for them to soften, but still retain their shape. Fill them with the beef/rice mixture top with mozzarella, and bake at 375 until cheese is bubbly and just beginning to brown.

I just hollow out the peppers.

Cook hamburger meat and mix it w/tomato sauce or for a sweeter taste use spaghetti sauce and stick the mixture in the peppers and stick them in the oven till hot. It is goood! ha!

this is how I make them:

cut tops off bell peppers and clean the inside. chop up the good parts of the tops that you cut off. chop a little onion. brown some ground beef, add salt, pepper, seasonings that you like. mix in the bell pepper and onion and let it cook for a little while. add instant mashed potatoes to the meat. you will need a little water since it will be dry. fill the pepper shells, then top with bread crumbs and a pat of butter. if there's any meat mixture left, just fill in around the peppers. bake at 350 until the crumbs start to brown.

I was thinking a dirty rice mix or some sort of meat/rice mixture. When I do this, I top it with a slice of cheese, cook it till it's all heated through, and the pepper is tender - ugh, don't remember the time on it, though. I cut my peppers in half vertically and then lie them down on their "backs".

Although I like all bell peppers, my favorite kind are the orange ones (followed by red), so I usually get those if I'm able and if they don't cost a million bucks.

However....we absolutely ADORE Indian food and flavors in our house, and I am going to have to try Sundeepa's recipe! Mmmm!

bell peppers are one of my favorite veggies too .... I stuff it with cheese & potatoes:
boil 2 medium potatoes and mash.
add 1 caramalized red onions
add handful of shredded cheese (sharp cheddar)
add herbs & spices:
1 tbsp of ginger, freshly grated
1 tbsp garlic powder
a pinch of paparika
1/2 tsp black pepper
1/2 tsp of garam masala, roasted (at whole foods)
a few sprigs of parsley, freshly chopped
salt to taste
stuff the above mixture into green bell peppers.
add a little bit of butter on top of each.
bake in the oven at 360 degress for 20-30 minutes.
enjoy!

the easiest recipe i have used is by using dirty rice mix. guess you cant get any easier.

If you go to www.allrecipes.com you will find a lot of recipes for stuffed peppers. Basically, I use hamburger and mix it like a meatloaf, then stuff the pepper.

I do mine in the microwave, but it is easy to do in the oven too.

I use Zatarans dirty rice mix, and make according to the directions, then add a can of diced tomatoes to mine.
meanwhile I cut the tops off the bell peppers and remove the veins and seeds, if doing in the microwave I place them in a microwave safe sqaure dish (I usually do 4-5) and microwave for 1 minute per pepper--I put the tops back on mine instead of chopping them up and putting them in the dirty rice.
When peppers have cooked the first round I stuff them with the rice mixture and cook them another 5-10 minutes or until the peppers are soft (varies by microwave)...otherwise put the stuffed peppers in the oven at 375 or so for 30 minutes.
