Please share with me your favorite low carb snack ideas and recipes. Hubby is already so bored with his diet after a few days of salmon, pork chops and chicken. Snacks usually consist of an apple or celery with peanut butter and cheese. Any ideas? Are there low carb crackers on the market? What about low carb cereals?

Get the F-Factor diet book. Not neccessarily to use the diet (it is the only diet that I have ever had success in losing weight, AND maintaining it) but because it has great low carb (high Fiber) delicious snacks and recipe ideas in it.

Actually, Cheerios is one of the lowest carb cereals. But Kashi has some that you can play around with. There are also lower carb milks, too. Some of them are quite good.

Our fav snacks when we are watching carbs are things like:
cheese (either prepackaged sticks or choose something new from the deli like cream havarti with jalapenos (yum yum))
peanuts
low carb yogurt (check out the greek yogurts)
Light bread. You can find good tasting light bread that has as little as 8 carbs per slice.
You can make breakfast casserole (brown bulk sausage with diced peppers and onions, drain, pour scrambled eggs mixed with 2 cups of your choice of shredded cheeses seasoned with some pepper over the top and bake). No bread. No milk. And it is YUMMY.
Roll up deli meat with a slice of cheese (or even cream cheese in the middle). Read the labels on the deli meat though. Boar's Head has some very healthy deli meats: we like their Tavern Ham for example.
Green olives stuffed into a rolled up piece of ham is great! And olives are practically carb free!
Broccoli, green beans, green leafy salads, cucumber, pine nuts, sunflower seeds, cole slaw (without added sugar: my mom's is just cabbage, sweet relish to taste, mayo and celery seeds), you can even make a low carb quesadilla if you buy the low carb tortillas.

My hubby loves the low carb wraps filled with lettuce, cheese, and tuna.
Mustard has practically no carbs. Use it wisely. ;)

They actually sell cook books that have low carb recipes. One of ours was a mexi meat dish. Brown ground beef, stir in a jar of salsa (read the label for carb counts) and 2 cups of shredded cheese. Voila. Serve it over a slice of toasted light bread if you'd like.
Avoid anything that calls for starches (potatoes or corn) and stick with green veggies as much as you can. Asparagas? yummy

I would like to add:
Anytime he feels he needs a snack, he should be sure that his snack has a little bit of protein in it. Protein is WAY more satiating than other things. So a handful of nuts (walnuts and almonds are the lowest in carbs, but pumpkin seeds are great too) or an ounce of cheese can easily get him over the "hump" to the next meal. If you keep some egg salad made up in the fridge, he could spread some on a slice of light bread toast and that would be a quick easy "snack" also. :)

wow, what really is jumping out at me....is how much cheese is being recommended.....which is high in fat! Please be very careful! When you're lowering or eliminating something from your diet, it's very easy to sabotage yourself by bumping up the intake of something else which is NOT good for you.....

Instead of dips, peanut butter....try salsa. I make both traditional salsa & fruit salsa. Both are delicious & take about 5 minutes to make. I serve Baked Tostitos & vegies with the salsa. Recipe: 1 large tomato, 1 jalapeno, 1/2 onion, S&P (to taste), & cilantro if you wish. Sometimes I doctor it with colored bell peppers, jicama, or anything else I'm in the mood for. Adding in some corn or beans (small amounts to boost fiber/protein) will add carbs but minimally. A splash of margarita, tequila, or lemon/lime juice will also add to the taste.

The fruit salsa can be made with any fruit! Last time, I used cantaloupe, 2 jalapenos, 1 onion, & the juice from 2 limes.....& that's it. It was fresh & flavorful. BUT, fruit does contain carbs....so be careful.

& honestly, the best way to approach any diet change is to ask your doctor to refer you to a nutritionist. I saw a one when I had gestational diabetes & it kept me off of meds! Good Luck!

Devilled Eggs
Egg Salad
Tuna
Pickles

One of my "regular" meals:
Ground chicken or turkey (or very lean ground beef)
Zuchini
Squash
Bell Peppers
Onions
- cook and season to your preference (I usually use montreal steak seasoning)
- top with cheese
(I actually cook it then split it up into individual serving size bowls, top with cheese and take to work to heat up for lunch)

Oh, and there are Carb Smart Ice Creams too!

My husband is a diabetic who controls it with diet and exercise.
He eats a LOT of almonds for snack. They are filling, excellent protein, and have almost no carbs. Peanuts have more carbs. Try walnuts...
Try cheerios - those are his 10pm snack...
We stay away from red meat, but eat all kinds of fish - try tuna, ahi, or flounder...
Have you tried to make a pulled pork? Those are yummy.
He eats an omelette for breakfast in the morning - with a little sausage.
Sometimes he has oatmeal.
There are all kinds of soups he can eat...
Ask the diabetic nutritionist for recipes -- make an appointment and go see her.

Check out The South Beach Diet cookbook. I have the book & it has some good recipes for breakfast & dinner. There is a great one with chicken. It's a salad with avocado & pistachios-both of which I didn't think that I'd like, but I love the salad.

One low carb idea is pork rinds. Being from the South, we could buy them freshly cooked. So good.
Also sugar-free jell-o topped with sugar-free whipped cream. Virtually zero carbs there.
String cheese is low carb.
Tomatoes... in moderation.
I forget the brand... but there is a low carb bread. You may can find at Walmart. Top with melted cheese... low carb snack.
I know the feeling.... I have been doing low carb and it is NOT easy for me either.

PS Cheese is a good low carb snack. Low carb can sometimes mean a higher fat intake. So in moderation, it is not so bad.

we love to snack on celery and carrot sticks with dip lays has a french onion that doesnt have any carbs my son really loves this.
cheese strings are great, and when I feel a sweet urge I snack on one quaker rice cake that has about the same carbs of 1/2 serving of cherrios.
also apple and other fruits with powder chili that has 0 carbs and less than 1% sugar.
