Looking for Recipe for Polish Mushroom Barley Soup

I had some awesome soup at a wedding at White Eagle on the north side of the city. They serve classic Polish food and the soup was mushroom barley. I want their recipe or something really close.

This recipe has been in my family for years. My grandmother used to exclusively use mushrooms imported from Ukraine... that is until Chernobyl blew up!

Ingredients:
1 cup total dried Shitaki and Porcini mushrooms
1 lb washed sauerkraut (save liquid)
1 cup barley
2 qt water
2 tbsp flour
2 tbsp vegetable oil
1 small onion, finely chopped
2-3 cloves minced garlic
salt and pepper to taste
bay leaf

Directions:
Soak dried mushrooms overnight in cold water. Drain and chop. Add to water with sauerkraut and barley. Cook for 1 hour till mushrooms and sauerkraut are soft.

Make a roux with the oil and flour. Add onion. Cook till very dark brown but not burned. At the very last minute add the garlic. This roux should be quite thick. Add to soup mixture. Adjust salt and pepper. If the soup is not sour enough add some of the sauerkraut liquid.

In addition to allrecipes.com, I also use Recipezaar and they have a Polish mushroom barley soup recipe here, in addition to many other mushroom barley soups. I always use the highest rated recipes and read the comments to help with the preparation. The results are always good!

I love that soup too --- and you can actually go to the White Eagle and purchase containers of the soup!! Everytime we make our way into that area we always stop at Superdawg for a hot dog and then down Milwaukee to White Eagle for a couple of containers of their soup -- its a nice treat!!

I have had the mushroom barley soup from White Eagle many a times. I have a recipe that I got a while ago that is pretty close to exactly what the soup at White Eagle tastes like. It is pretty lengthy with a lot of steps to write in here. If you want to send me your personal e-mail I can make a copy of it for you and attach it so you can have a print out of it. It is the best soup and a favorite in my household :) And comes pretty darn close to the White Eagle recipe.
