Freezing Pies and Cakes

I was wondering if anyone had had any experience freezing pies, cakes, and bread (like pumpkin bread). I'm wanting to make some to give as presents, but I'm not sure how long they will stay good in the freezer. I'd prefer to cook before I freeze, but would it be better to cook after? Could I freeze, cook, then freeze again? I'm wanting to give these for Christmas, and my daughter's birthday is the week before, so I'm trying to get as much of the work done as far ahead of time as I can.

BTW - any good pumpkin bread recipes?

Frozen pies are better than non frozen pies! One year we had a LOT of apples, after we had made PLENTY of sauce and butter and anything else we could find a recipe for, we started on pies. We made about 15 pies, but didn't have anyone to give them to so we froze about 10 on the uncooked pies and baked them later. The frozen pies were SO much better than the others, and it was the same batch of filling and crust, so it had to be the freezing that made them so good :) Now we always freeze the pies before baking, if time permits.

I freeze fresh berry pies all the time. In fact, they are indeed better!

Don't cook the pie before you freeze it, and there is no way it will refreeze. The dough is wonderful, better than fresh!!!!, if you freeze it raw. Make sure you wrap it good in cling wrap and then in foil, before putting it in a freezer zip lock.

With cake, you of course have to bake it first. Again, wrap it in cling wrap and then in foil.

Hi K.,

Great idea to bake a freeze early before the holidays. I usually start my cakes and breads in October. I'll freeze the layers after they have completely cooled and when needed pull them out, let them almost thaw and then frost. It seems to be easier when the layers are cool. I do the same with breads--whether quick breads or yeast breads--unwrap from the freezer and let them thaw before wrapping for gifts.

im not sure about pie and bread, but I used to work at Baskin Robbins as a cake decorator... obviously all cakes were frozen. lol. The cake itself is good for about 3 months in the freezer (covered) but wait to decorate the cake... We used buttercream frosting for the decorations, and after 3-4 days the colors start to fade. It's actually a LOT easier to decorate while it's frozen too. :)

you can freeze all that stuff! I am a pastry chef and unfortunatly we have to freeze alot of things ahead of time! Dont freeze the cakes or bread before you cook it though. Pies can def be frozen before cooking. For the pies and cakes freeze them, wrap them really good in a heavy duty plastic wrap(you can buy it at Sams club or Gordons or someplace like that), its around 14 dollars but it will last forever and is much better for freezing than what you buy at the grocery store. You can even decorate your cakes, freeze them, then wrap them! When you take them out to thaw unwrap them before they thaw out. For your bread just make sure its really cool, I give bread as gifts alot and I wrap it really nice in the plastic wrap, and mark it with a small piece of tape on the bottom of the bread so I know what it is. When I take it out I put a ribbon on it and there is my gift! If you already know its gonna be for Christmas you could do the ribbons now and its all done!

My grandmother used to freeze breads all the time....in fact, the one thing we looked forward to were her banana nut bread sandwiches...the key is making sure they are as air-tight as you can get them...I will wrap a loaf in plastic wrap, and then put into a ziploc bag...she made little sandwiches after freezing the bread (it's easier to slice then), filled with cream cheese/Tang/lemon juice mixture, and refroze. She put them in a big Tupperware container with wax paper in between the stacks. I would say that if you wrap them tightly, protect from air and ice crystals, you'll have no problem whatsoever!
