Great Recipes to Freeze

My sister in law just had there second baby and they work odd hours with her being a nurse and husband a fire man. We are going to see them out of state in a couple of days and I would love to cook them a bunch of meals to freeze while we are there. Any of you great moms have any meals that freeze really well? What do you store them in when you freeze them? They always love my cooking when they come to visit us, but I'm not sure many of my recipes would freeze really well.

When I was pregnant with #2 I made up several meals to freeze:
-meatloaf
-enchiladas
-chicken pot pie (although next time I'd freeze it in the glass pie plate and once good and frozen I take it out of the plate and wrap it in plastic wrap then foil. I froze in a tin and it gave off a tin/metal taste)
-Soups freeze really well
-Lasagna
-Baked spaghetti
-Pot Roast and veggies

I either wrapped everything really well in layers of plastic wrap and then foil or placed in plasticware with the lid, wrapped that in plastic wrap and then foil

Remember Homemade Spaghetti sauce , Homemade meatballs, grilled burger patties, grilled chicken and beef fajitas ,Flour tortillas all freeze great.

Here is my award winning King Ranch chicken recipe.
You can make this up in a big baker and then divide it up to freeze or you can prepare in 3 different containers and then freeze.

1cup Chicken Broth
8 to 10 corn tortillas or bag of tortilla chips (be careful to purchase lightly salted or no salt chips)
1 lb boned chicken. (you can even uses a store bought roasted chicken)
1 medium onion finely chopped
1/2 bell pepper chopped
2 cups grated Monterey Jack cheese (or sharp cheddar cheese)
2 tsp chili powder
1 tsp ground cumin
1 11oz can cream of mushroom soup
1 11 oz can cream of chicken soup
1 can of Rotel tomatoes with chilies

1 cover bottom of 8x11 (or 9x13) baking dish with tortillas that have been dipped in chicken broth. Place chicken over tortillas. sprinkle onions and peppers in next layer. Sprinkle chili powder and cumin over this.
2. Squish the Rotel tomatoes into the 2 cream soups until fairly well blended and pour this mixture on top. Cover with remaining cheese.
3. Cook in a 350 degrees for 40 minute. Do NOT cover. Place foil or baking sheet on next rack below to catch any spillage.

I think this is best the day after cooked when reheated..

I agree with the other food ideas...meatloaf, spaghetti, casseroles with pasta. My secret for freezing is to layer the pan you're going to put it in (to eventually bake) with heavy duty foil, making sure to cover all edges and leave enough to wrap around the entire top. Then put the food in, freeze, and you can remove from the pan and wrap the foil in plastic or put it in a large zipoc. This way, when they want to eat it, they can just take it out of the plastic, thaw a very little, and take the foil off, put it in the pan again that it was frozen in and bake. (Or if it's in pyrex, pop in the microwave if it's microwavable.) This will save time, and she'll know what pan to cook in, but it won't take up her pan. This way you can freeze several to go in the same pan, also! How very thoughtful of you...Good luck!

This is a favorite of mine for new mothers or sick friends, because I think of it as comfort food. I worry about sending spicy foods to nursing mothers or people that do not feel well. I have made this many times and it freezes well. I make it in a foil pan that does not need to be returned and put the recipe, date and heating instructions on the top.

Homemade Chicken Pot Pie

Filling:
2-3 cups chopped cooked chicken
1 package frozen mixed vegetables
1 can cream of chicken soup
1 can cream of mushroom soup
1 cup grated cheese
1 T garlic salt
1 T pepper
1 T marjoram

Mix together and pour in a baking dish.

Crust:
1 stick melted margarine or butter
1 cup milk
1 cup self-rising flour

Mix crust ingredients together and pour over other ingredients. Bake at 400 for 35 to 45 minutes. May be reheated in a 300 oven or warm individual servings in the microwave. May also be frozen for up to six months.

Things I freeze all the time:
Chicken spaghetti
Cannelloni/lasagne
Taco meat
Fruit breads

I've made my own "containers" by just putting the food in a Saran- or foil-lined pan, freezing, removing the pan and double-wrapping with foil or sliding down in a zip top bag.

That is so considerate of you. I would say that most anything freeze's when cooked but not so much the vegetables'. They sometimes get watery after being frozen. Any kind of meat will freeze after being cooked, fish is iffy, as it absorbs water. If adding vegetables and you want to freeze them, don't cook them. Even the frozen ones' leave frozen. Put them in containers', preferrably plastic with a lid that seals tight. If your doing a rice, put it in plastic baggies, then when they go to eat it they just have to put the baggie in water, let it come to a boil (leave a bit of opening while in the water) but have it standing, and it will work just like its just been cooked. I'm sure your brother and sister in law will be forever thankful. As for baking, almost anything freezes', and then put in microwave for approx. 15-20min.

There are a lot of good answers just keep in mind spicy foods and nursing mothers are not a great mix. They never bothered my babies but many friends wound up with very fussy babies. You are very kind to help.

You can get these recipes online, but other things that freeze great are:

Sour Cream Enchiladas
Lasagna
Chicken Pot Pie
Taco Soup
Chicken Tetrazzini

Other fun things to do is to have a big plastic bag and inside you put a complete meal...(if they have the freezer space.) So you put in a bag of say...frozen corn, a frozen loaf of garlic bread, and a main dish. So it is all there and all they have to do is heat it all up.

Any kind of beans dishes like chili or ham and beans, etc freeze well. Also if you freeze soup just put it into freezer zip lock bags that have a flat bottom, this way it takes up less room in the freezer (thanks go to my mom for that one). I have a little plastic bin that I then store them in.
