Not sure if they sell it where you are, but here in good ole LOOOZIANA :) we use Tony's Chachere's. I would think that a little cayenne pepper or red pepper would do the trick otherwise. Yes, big difference in this and seasoning salt. Hope your dish is c,est bon!

In a pinch I have used season salt in recipes as a substitute. It usually works just fine, just be careful not to over salt it.

I had never heard of Cajun or Creole seasoning until a couple years ago, but now I make a Cajun Fettuccini that the whole family LOVES, as well as some other recipes, with it, and I make sure I always have some on hand. Great on grilled chicken breast! Unfortunately the ingredient list just says: Salt, red pepper and other spices, garlic. Not much help. :( I like to make up my own spices to avoid fillers, so I think I'm going to give the recipe below a try!

The main ingredients in my creole seasoning are salt, red, white, and black peppers, and garlic. I don't if that helps at all (I certainly don't keep white pepper in my cupboard) but there you are.

No. Troy said Cayenne pepper, thyme, some seasoning salt...he is making sure he is right. :) Ahh 2 1/2 teaspoons paprika, 2 tablespoons salt, 2 tbs garlic powder, 1 tbs black pepper, 1 tbs onion powder, 1 tbs cayenne pepper, 1 tbs leaf oregano, and 1 tbs dried leaf thyme.

Yeah, I cook the Italian, some traditional American and he does everything else. My Spanish is improving though.

These are the mixes I make. The Creole mix is for big batches, so you would need to cut the mixture. The other is a simple cajun seasoning.

Creole:
* 3/4 cup paprika
* 1/2 cup salt
* 1/2 cup garlic powder
* 1/2 cup onion powder
* 1/4 cup black pepper
* 1/4 cup cayenne pepper
* 1/4 cup white pepper
* 1/4 cup basil
* 1/4 cup oregano

Cajun:
* 1/4 cup salt
* 3 tablespoons granulated garlic or garlic powder
* 3 tablespoons ground black pepper, freshly ground if possible
* 1/8 teaspoon ground cayenne pepper, or to taste
* 1 tablespoon paprika
