I love this confetti chili - but it is only for those who like beans...

2 pounds ground beef browned and drained
1 onion diced and browned with meat
2 cloves garlic crushed
2 cans chili ready tomatoes
1 can black beans - rinsed and drained
1 can dark red kidney beans - rinsed and drained
1 can white great northern beans - rinsed and drained
1 can chili beans in sauce
1 cup frozen corn - thawed (or use canned)
chili powder to taste
may need to add some water

simmer all - works great in a crock pot!!!

Emeril's chili recipe is excellent. I usually skip the part at the end where you add the mesa flour and it is perfect. I really don't even like chili but this is impossible not to love.

I do 1lb of meat (venison is better, but beef if you don't have it available), with 1 chopped onion and 1/2 a chopped bellpepper. Drain it, then add a jar of Tobasco Chili Sauce (found at Albertsons but not Walmart---I like the hot better), 3/4 C of beer, 1 can (undrained) of rotel chili fixin's tomatoes, 1 can of chili beans with hot sauce, and a good handful or two of sliced mushrooms. Put the lid on it and cook on low awhile. Taste it, and if you'd like, it wouldn't hurt to add a little salsa or sliced jalepenos to it, depending on your taste. My husband thinks it's supposed to go over brown rice, topped with cheese, but I think it's supposed to go in a bowl and served with a few crackers and cheese. Either way, this is a good bowl of chili.

Neiman Marcus has the best white bean chili. I know it sounds odd since they're more known for their wonderful shopping, but trust me. They serve it in their cafe every week. It's so good! I found the recipe online...good luck!
