I was wondering if any of you had some awesome vegan or vegetarian recipes that were flavorful and healthy that you would be willing to share with me! or even links to good recipe sites would be awesome!

Oy! Far too many to list!

About half of what I cook is vegetarian, and about 1/3 of that is vegan.

Right now this moment? I'd have to say coconut curry, or cajun stuffed peppers. Or maybe samosas or rissotto. Or Inari. Or some bao. Yeesh. I'm getting far too hungry this morning!

I make rice pilaf. I use chicken broth, but you can use vegetable broth.

The best recipe site I know of is allrecipes.com. Its free and you have access to thousands of recipes. They will try and get you to pay for their fancy service, but I've never needed it.

I'm pretty sure Ellen Degeneres is a vegan and posts her favorite recipes on her site. That's not what you're asking..but that's where I'd look first.

Japanese stir fry with tofu. Just use Shoyu and sesame oil to flavor and chili pepper flakes. Use snow peas, watercress, long rice (also called 'cellophane noodles'), tofu. That is my version.

Three Bean Salad. Just combine any 3 beans you like (canned beans) and add a vinaigrette to it. Any one you like. Marinate for a couple hours. That's it. Or, make your own with Balsamic vinegar/evoo Olive Oil/salt & fresh ground pepper to taste.
You can also add: crushed mint leaves and basil leaves. And, cored slices of cucumber. I like to scoop the cucumber seeds out before slicing so it does not water down the salad.

lentil tacos.

Go to Trader Joe's buy, the cooked lentils, taco shells, taco seasoning packet and any taco stuff u like, lettuce, cheese etc...

toast the taco shells on a cookie sheet in the oven
usen a skillet to heat up the lentils, mush about 1/2 of them w/ a potato masher, add the taco seasoing, and you'll need some water 1/4 to 1/2 cup to get it the right consistency

and then assemble and eat. YUM! my meaty husband loves them.

Last week I made some Spinach and Ricotta stuffed shells. I used the recipe on the Butoni manicotti box. Instead of cooking pasta prior to filling, I filled the large shells first. Just add 1 cup of water to the the sauce amount on the box and stir. Then put 1/2 sauce in baking dish, then stuffed (raw) shells, and the rest of the sauce. Bake in a 350F oven until shells are cooked through (35-45 min?). You can add some shredded parmesan cheese during the last 10 minutes
