So, I'm thinking of going vegetarian for 2012. (no meat but I will still have dairy) Does anyone have any good recipes they love to get me started? Thanks!

Anything from Moosewood! Great variety and everything from soup to nuts (literally :-)

I just looked and she has a bunch of free recipes on her website: http://www.moosewoodcooks.com/ She also has recipe books there, but I don't even see my two favorite (the original Moosewood Cookbook and the Enchanted Broccoli Forest).

Thanks for the question -- I'll have to try some of those new recipes out!

as a genre mexican lends it's self well to vegetarian. Replace the meat with beans and there you have it. (burritos, taco salads, veggie enchiladas)

While the weather is cold, there are also many soups that work well as vegetarian.
(look up varieties for squash soup, African peanut soup)

for sanwhiches look at lavash from t.j.'s or a local persian market and fill with feta, hummus, olive, tomato, lettuce, onion (its flat bread so roll it like a wrap)

asian- stir fries are great

Get a panini maker and fill them with roasted bell pepper, mushrooms, cheese, basil.............

Pizza. but get creative. you can buy pre made bread dough, and fire it up on the bbq

not the mention the endless salads you can create

(I am not strickt vegetarian now, but way back when, my roommates used to comment on the variety and interestingly appetizing foods i made (I was a strict vegetarian then), but would complain at the thought of going veggie and wondered what the hell they would eat. It may take an adjustment, but variety won't be a problem)

I drink delicious protein shakes for breakfast and sometimes when making my family dinner I use a protein drink as my "meat."

Just be sure to get enough protein. All carbs won't cut it. Your body needs protein.

Roasted mixed vegetables with sea salt, basil and olive oil. Serve on toasted garlic Turkish bread. Gnocchi with a delicious tomato pasta sauce, borlotti bean soup with noodles, using vegetable stock. Honey soy stir fry with fried tofu. Bean nachos. Toasted dark rye bread topped with hummus, cherry tomatoes, carrot peeling and chopped celery. Yum, yum.

Salads and stir fries, salads and stir fries, and salads and stir fries. Almond butter sandwiches. Mexican food with lots of beans and avocados. Pizza with black olives and tons of onions YUM. Crackers and hummus. Pasta with lots of veggies. And green smoothies. Cliff bars in a crisis. That's pretty much what I eat. I'm just always switching up the ingredients in the stir fries and salads and smoothies. I eat eggs and cheese(but try not to overdo cheese for fattening) reasons and fish and turkey or chicken(almost never) in a pinch if NOTHING healthy and vegetarian is available and I'm STARVING. If I'm shopping for myself and choosing restaurants, I don't know how I would possibly incorporate meat into my diet. Most people's diets have plenty of protein if they're healthy and the meat is totally superfluous. It becomes natural not to eat it easily, good work, go for it!

Awesome! I've been vegetarian almost 20 years and I'll never look back. Check out morningstar farms, tofurky, Amy's, white mountain and quorn products to get you started. I also like the book ""vegan with a vengeance. "
I know you said vegetarian but you can always use the recipes with real cheese or milk.

I make soups and pastas that I have made for years, but leave the meat out. I'm not a vegetarian, but my husband went vegan for awhile, and I have never eaten a lot of meat. I've discovered that I like most of my usual recipes better without the meat (either meat or chicken dishes). It's an easy way to change your meals. Good luck! :)

Quinoa is a good food for vegetarians. It's a high-protein grain, and you cook it like rice. You can use it in any dish that you would normally use rice in. They have it at Whole Foods.

Be careful with certain canned goods - some vegetable soups contain beef or chicken broth, and refried beans are sometimes made with lard.
