I am actually finishing my degree in Early Childhood Education and Development right now! I bet if you advertise at some local colleges you could get some really good applicants. I would suggest Texas Woman's University (where I attend), Collin College (I also have taken classes from their Child Development Department... so good!) - formerly Collin County Community College, and University of Texas at Dallas (they've got a fairly new Education Department).
You could also request to be included in the list of places that are approved to be observed by the students or used in their Service Learning. You could find some really good teachers through hosting their Service Learning or Student Teaching.
Any new teachers would be fresh and up to date on the new preschool techniques and guidelines. I currently work in a Pre-K classroom in the Richardson ISD, and I think the new direction Pre-K is taking is SO exciting!
