At four-thirty this afternoon I had no idea what I was going to do with my freshly-boiled chicken breasts but by five-fifteen I was told that "You're the best cook in the world" and made to give fist pumps all around the table. SUCCESS!!!!! 'How'd you do it?' you may ask...I had a flash of brilliancy and went for it. Actually, truth be told, I looked in my empty fridge--no fresh veggies, and some half and half leftover from my chicken tetrazinni week and a half ago (better use that soon); I looked at the next-to-empty pantry--tomato sauce, canned corn, mac n' cheese...really that's it???? And then--epiphany! Didn't I once try to make chicken tika masala? It didn't come out too good; Dare I try again?!?!?
I dared! It came together so nicely. I'm patting myself on the back. I hope anyone else who's pulled something divine out of nothing will share their success with us here. (Maybe we'll get some good ideas for dinner tomorrow!)

Chicken Tika Masala

3 large chicken breasts, boiled, shredded or chopped, stock reserved
One pot of white rice, cooked

2 tbs butter
2 cloves garlic, minced
2 ts cumin
2 ts paprika
generous dash of chili powder
2 cans tomato sauce
2 cups heavy cream/ half and half
1/4 c cilantro finely chopped

In heavy saucepan melt butter and saute garlic for a minute or two. Add spices (then take a whiff...yummy.) Add the tom. sauce and bring it to a low simmer for three minutes or so. Reduce heat and add cream and cilantro. Use about a cup of your chicken stock to keep this loosey goosey. Next, and this is important, get out your taster spoon cause you're gonna need more spices and some salt, but it's up to you to get it to the degree you like. For me, it was a generous sprinkling of salt, another teaspoon or two of cumin, and another pinch of chili powder. When it makes your mouth water and your spoon to keep dippin' you can add your chicken. I then turned it off till the hubby got home about fifteen minutes and then warmed it back up. I served it over the rice (boil 3 cups water, and one cup stock, add 2 cups uncooked rice; reduce heat to med-lo/ low; cook 10-15 minutes until done) and with some steamed frozen veggies.

I only wish I'd made more. My family didn't leave me any for leftovers for lunch tomorrow. ;)

OMG it was a heat index of about 110 here today, so I did not want to cook so much as toast, lol! We had a ton of frozen shrimp, so we fired up the grill and hid in the house until the coals were hot and grilled them up. Shrimp are so quick to grill, it was tolerable. I just did a variety of quick marinades, like bbq sauce, lemon pepper, garlic lime, and just plain old butter and salt. Each skewer was a different flavor, so we had a nice variety. We just served with a fresh garden salad and a fruit salad of berries, papaya and melon. I did make some crescent rolls from a tube in the oven, because my boys NEED to have some bread with dinner, lol!

Hi--I'm gonna write down your receipe! Sounds great!

If I have some cooked chicken--leftover from a Costco roasted chicken works great, I make "Green Noodles". It's fast & fairly healthy, I think. I make this whenever the cooking muse has left me, or we've been out all day & I have to make something FAST!

2 Cups Cooked Chicken, shredded or cut up into bite size chunks
1/2 a jar of Costco Pesto
1 large bag of frozen veggies--I like the California Blend (Broccoli, Califlower & Carrots)
1 box WW or Mulit-grain Penne or Twists

Boil water, add pasta--when there is 7 mins left, add the the frozen veggies. Drain pasta & veggies, put back into the pan. Add the Pesto & chicken, toss together til everything is saucy. Serve.

ps. If I have fresh spinach, I blend the pesto with the spinch in my mini-food processor. The noodles are "greener", but the girls have NO idea that they are eating a boatload of spinach, too. I've added fresh zuccuchis this way, too. Broccoli is too strong a taste to hide this way, unfortunately. Sometimes I use frozen chopped spinach, thrown in the water @ the last minute--but they do NOTICE that! But they'll still eat it!

Great recipe!

Yesterday was a crazy day with kids swimming and the lack of motivation to cook. My sister was over and we talked about WTH we were going to make for dinner. I proposed lasagna... didn't have ANYTHING ready and my sister thought I was nuts :) It was 5:15pm, and I said "I WILL have a stinking lasagna on the table if it kills me". Her response was "you wish, you're so full of €{%#"! I called her at 6:00pm and told her I was pulling my lasagna out of the oven! Hee hee, I pulled it off and it was awesome. It was a simple ground turkey, ricotta, jarred sauce and only 4 noodle sheets along with spices, etc.

MMMmmmmm, your dinner sounds delish!

We didn't eat until 7:30 pm because I didn't want to cook in this horrible heat wave that we've been having, but families have to eat and it was too late to go out sooo........
We had Lemon pepper chicken breast, cut in strips, sauteed and covered with a portobella mushroom cream sauce.
Pasta
Green beans fresh from the garden
Garlic bread.

Not half bad for wanting to order a pizza and then whipping up a dinner, if I do say so myself! :)
