I bought some Salmon, and wanted to make something quick and easy for dinner... any ideas ladies? Also something to go on the side will be great!!

So What Happened?

wow ladies.. all those recipes are making my mouth water :) I somehow fell upon I think UK website and tried their recipe it was very good (except for the extra salt i added woops---lol) Here is the website... www.bbc.co.uk/food

Marinate for at least 1hr:
Soy sauce
Lemon juice
Chopped garlic clove (large)
A little white wine if handy

Prep:
Mix Italian bread crumbs, parmesan cheese, salt & pepper
Pat on

Cook:
Pan fry in light coat of olive oil
About 3min/side

I prefer it medium.

Served w/ rice cooked w/ chicken broth (w/ herbs) & about 3/4 cup frozen peas & carrots

My family loves this salmon dish. I got it from Everyday Italian cookbook. I do not care for salmon but I love the flavoring for this dish. It is easy and you can make ahead.

Salmon Baked in Foil

1 14 oz can of diced tomatoes (drained)
2 shallots (chopped)
2 Tbls plus 2 teas. olive oil
2 Tbls fresh lemon juice
1 1/2 tsp. chopped fresh oregano or (3/4 tea. dried)
1 1/2 tsp. fresh thyme or (3/4 tea. dried)
1 tsp salt
3/4 tsp freshly ground black pepper
4 salmon fillets (about 5 oz each) (I use 1 lg fillet about 1-1 1/2 lbs)

Preheat oven to 400. In med bowl stir the tomoatoes, shallots, 2 tbls oil, lemon juice, oregano, thyme, 1/2 tsp salt and 1/4 tsp pepper.

Using a large foil sheet (I use the non stick kind) spoon a little oil, salt and pepper to taste on the foil and coat the salmon. Spoon the tomato mixture on the salmon. Fold the sides of the foil over the fish and tomato mixture, covering completely and seal the packet closed. Place the packet on a large heavy baking sheet. (this is the point where you can have everything done up to 6 hrs ahead, just refrigerate until ready to cook)

Bake until salmon is cooked through, about 25 minutes. Transfer the salmon and tomato mixture onto a serving dish.

I usually make some rice and a green veggie to go with it.

** The foil packet makes for easy cleanup!!**

I've got the easiest recipe ever! Thaw your salmon if it's frozen and generously cover both sides of salmon with remoulade sauce. (It's the thousand island-like sauce that is usually served with shrimp or crab.) Put the salmon in the broiler--about 5-7 minutes on each side and you're done! I like mine a little crispy on the outside so I keep in in for 7 minutes. My husband likes his salmon not so well done, so I take his out quicker. Enjoy!

We grill salmon all the time. We use a little bit of olive oil and Old Bay. It is a seasoning you can find in the seasoning aisle. It tastes great. We get tons of compliments on it and it is so easy to do. Just put the olive oil and Old Bay on right before you put it on the grill.

McCormick has a seasoning called "wine and herb" and it does the best job. You add balsamic vinegar and olive oil.Just marinate a short time and grill. Even my kids love it!

well, I see you got a lot of great receipes, and mine may not sound as good to read, but it tastes great and is SOOOOOOOOOOO easy and takes virtually no time: All you have to do is....(see below) and it works with ANY fish:

1)Prep fish/sprinkle with seasoning - Make sure fish is wet (usually is from being packaged, but if not, use water or milk). Sprinkle with seasoning. I used seafood seasoning (specificly for seafood) you can get at any grocer-I can't remember the brand name but some I use has a guy's face on it and it is called BLAKENED SWORDFISH (one type, and you can use it on any fish) or SEAFOOD MAGIC (same brand but another type) or you can just use a generic seafood seasing like OLD BAYS (that is the brand name but it is for seafood), or just season with salt, lemon pepper, and any other seasoning you like (cayan, etc).
2) Turn the broiler on in your oven with over racks about mid-level in oven or maybe slighly closer to broiler
3) Place fish on broiler pan and place in oven for about 5 mins.
4) Turn/Flip fish and sprinkle with seasoning and melted butter
5) It will be done quickly (only a few more minutes) - you will know it is done when you stick a fork in the fish and it breaks or flakes appart.

You can serve with rice and/or freshly prepared green beans (steamed on the stove and started slightly before the fish) and maybe a salad for an AWESOME meal!!!!!

If your up for grilling, my mother in law makes some on the grill, she puts the salmon in alumin foil and puts lemon juice all over it and lemon pepper, wraps it up and grills it and it's pretty good.

I think I found this at www.allrecipes.com, but you coat the top-side of the salmon with dijon mustard (I have used a mixture of spicy brown mustard and mayo if there was no dijon around), then coat that with italian style bread crumbs and bake it. It's always a big hit. For a side dish, we often serve wild rice and some sort of steamed vegetables. Broccoli is a staple, but Green Giant makes these small packages of frozen vegetables that are microwaveable. The asparagus is really good, and so is the green beans and almonds one.

So one of my favs is:
in a oven pan - lined with foil - place your salmon and (hopefully you like these vegetables!) thick slices of zucchini, squash & asparagus spears in - sprinkle over a spice of your likeing - I like any pepper & garlic kinds - wrap the foil over - making a seal - then bake in the oven at 450 for apx 15 min - THAT'S IT!!!! And it's great - the vegetables don't get over cooked.

The Today show this morning did a salmon recipe that looked great. I bet you can get it off their web site. They basted it with something and put corn flakes on it and cooked it. It looked really great. I think the guy was from Cooking Light magazine. Good Luck!!

I buy this seasoning at Central Market called "Rub of Love" for seafood. It is amazing!! Really good. I put that on the fish and pan cook in olive oil. You can also drizzle a little honey on top when your done. Super fast and easy and very, very good!! My kids love it too!! They clean their plate.

I have rave reviews on my salmon, spread dijon mustard on it and garlic powder lightly. Pour teriaki sauce on it and bake at 325 for about 10-15 min, pull out and spread with orange marmalade and bake a little more check the color. Then pull out and turn on the broiler and put fish under it just for a little bit (Do not over cook) till the jam starts to bubble. It is yummy !!
