Hey everybody my little girls Spanish School House is putting together a recipe book. If any of you have any favorite recipes you would like to share we would love for them to be in the cookbook. It doesn't matter what kind of food it is. Just your favorite!! Thanx in advance for your help!! I hope you all have great holidays!!!!

Here is my kids favorite "vegetable" recipe :-)

Chocolate Zucchini Bread
Grandma Harriet Manning

3 eggs
1 C oil
2 C. Sugar
1 tsp vanilla
2 oz melted baking cocoa (or 6 Tablespoons of cocoa powder mixed w/ 2 Tbsp oil)
2 C grated zucchini
2 C flour
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
1 C chopped nuts (optional)
Beat eggs, add oil, sugar and vanilla. Stir in chocolate and zucchini. Beat in flour soda, salt, cinnamon. Add nuts. Pour into 2 greased loaf pans. Bake 1 hour at 350

Here's a great recipe for cookies even though they are called "Tea Cakes".

2 sticks Parkay butter
2 eggs
1 tsp vanilla flavor
1/2 tsp baking soda
1 tbsp baking powder
3 c flour

Cream butter and sugar then add eggs, baking power, soda and flour. Mix well. Drop a teaspoonful or tablespoonful on greased cookie sheet. Bake @ 375 degrees until light brown.

Enjoy!

Here is my easy recipe always a hit.

Black bean Salsa
2 avocados (cut in small pieces)
1 can of corn (drained)
1 can of black beans (drained)
1 tsp. vinegar
cilantro
1/2 Red onion (chopped)
jalapeno (chopped)
Tomato (chopped)
salt to taste

Mix all ingredients in bowl. Serve with chips.

Enjoy.

Here is a dip recipe that gets requested of me everytime I'm asked to bring something to a party! It goes like wildfire!

2 blocks Philadelphia Cream Cheese
1 can rotel(undrained)
1/2 tube of sausage (I like Jimmy Dean Original)

Brown the sausage in a skillet. Add cream cheese that has been cut into cubes and can of rotel. Heat until cream cheese is melted and dip is creamy. YUMMY! We like Frito's the best with this particular dip. You can also add the whole tube of sausage if you like it meatier (my husband does).
