Hello M.! I have an idea for you. This comes from my learning to get my 5 kiddos to eat vegatables! I bake sweet things with vegetables in them. I have a great chocolate cake recipe that uses garbanzo beans. It is wonderful! Trust me, my picky eaters, including my husband will eat it. If you try it, make sure that they dont watch you putting the beans in! Also I put mashed sweet potatoes in with regular mashed potatoes and a bit of cheese. I call them "cheesy potatoes" and the kids see the orange color and just think that it is cheese. I hope this makes sense and helps. Good luck to you!

1 1/2 cups chocolate chips- 1 regular size can garbanzo beans drained- 3 eggs- 1/2 tsp baking powder- 1/2 cup sugar
preheat to 350- grease and flour square cake pan- puree beans and eggs very well- add sugar and baking powder- melt chocolate chips in microwave, then mix into batter- bake for 30-40 minutes until toothpick comes out clean from center of cake- cool for 1/2 hour or so- you dont have to have icing- I know this sounds wierd, but it is really good and nutritious!
I live in Anthem also. Feel free to email me if you want! _dawn

I am having the same problem with my 23 month old. I have been buying that V8 Fusion juice which is supposed to have a serving of vegetables and fruit in every 8 oz. He drinks it up pretty good. (Although I tried to sneak in some actual original v8 juice on him and he just spit it out ;) ) I bought that Jessica Seinfeld cook book, but I have yet to make anything from it. Good luck and keep trying! The juice is over $4.00/bottle at safeway, but I just paid $2.50 at Walmart.

There is a cook book that i can't remember the name of but i would guess that a book store will know. it is full of wonderful recipes that hide veggies in regular food. chicken nuggets and brownies are two that i remember. I know a lot of people that love the book and find that it works.

I got a good recipe from Jamie Oliver (I think that's his name) from the foodnetwork where you make spaghetti sauce and put butternut squash, zucchini, carrots, bell peppers, tomatoes, etc. in and just puree the heck out of it. My no veggie eatin husband has no idea he is eating so many veggies when I make that. I also heard that kids have to see a food about 10 or so times before they'll try it. Just put some veggies / salad, etc on his plate but tell him not to eat it, and eventually his fork will migrate over to it. Or make a homemade cheese sauce and goop it all over cauliflower or some other veggie. Or a friend of mine whose son loved dinosaurs, would eat tons of broccoli b/c his favorite dinosaur was an herbavore, and the brocolli looked like little trees and dinosaurs ate trees.. Just brainstorming ideas. Maybe try to tie is something he likes like that.
