One Pot Meals with Beans and Veggies?

Hi Moms,
I am trying to eat healthier, but have a really hard time getting myself to cook. Do any of you know of any yummy main dish recipes made with beans and veggies together? Maybe a crock pot meal? Thank you for any ideas.

When our grocery bill is getting too high, I make this - there are endless varieties:

Make 1 cup of rice (I like medium grain brown, but whatever you've got).

Toss it with 2 cans of beans (I like kidney and black, but again, whatever you've got).

Sautee up about 2 cups of mixed veggies - again, I like spinach, onion and peppers, but you can use anything - carrots, squash, etc.

Toss it all together with salsa and cheese. (You can also add some low-fat sour cream if you like it creamier - I don't care for sour cream). Put it into a baking dish, top with a little extra cheese (and some crushed tortilla chips, if you can spare the calories that day, and bake at 350-400 degrees until it's bubbly.

In the crockpot:

Easy Mixed Bean Chili
1 can black beans
1 can pinto beans
1 jar of your favorite chunky salsa
10 package frozen corn
1 sweet potato cut in small cubes
1 small packet taco seasoning
Cook on low for 6-8 hours.

Crockery Beanery
1 can black beans, drained
1 can kidney beans, drained
1 can baked beans
1 can tomato puree
1 can corn, drained
1 onion, chopped
2 cloves garlic, pressed
1 Tablespoon chili powder
1 T oregano
1 T cumin
Cook on low for at least 6 hours.

I do the version with chicken, and my kids love it too.
It's really nice, because all you do is open cans and packages, dump them in a pot, and heat. No chopping, measuring, browning, etc. Of course, you can substitute fresh ingredients for any of the canned items, but if you have the canned items in your pantry, you can whip up a meal if you have unexpected guests come by (we do this when the kids have their friends stay for dinner).

We do beans and veggies with whole grain rice about once/week. I just chop and cook whatever I have in the fridge, and then add beans, heat through and serve over rice. Last week we did black beans, corn, mushrooms, onion, and garlic. Week before was sweet potato, zucchini, onion, and garlic with pinto beans. If it seems dry, you can add a small can of tomato sauce or salsa. I know you are looking for main dish, but hummus is a good way to make beans too...great for snacking or replacing higher fat spreads, like mayo. To really save money, buy dry beans, sort, rinse and soak overnight, then add to your crockpot recipes. Canned beans are ridiculously expensive now.

I ground about one pound of ground beef, add chopped onions, a few tablespoons of ketchup and some cube of beef broth and either frozen veggies or can, add a can of chili beans. Add some water to thin. Makes a great bowl of veggie soup and it's hearty.
You can use a crock pot but you'll need to cook the beef before adding. I can throw it together in a pot on the stove in less than 30 minutes.

You can always make soup =)
Use the canned tomato soup, the less sodium kind. And mix all your cooked veggies together for a big pot of veggie/tomato soup. Yum!

Love, love, love my crock pot. I don't cook much, but one easy yummy dish I love is veggie soup in the crock pot. I throw a pound of ground beef in for my hubby's benefit but it would be good without.

In a crock pot in the morning, I throw a pound of cooked ground beef (you can cook it in advance when you are browning some for another meal, I cook mine in a Pampered Chef microwave steamer and add a little worchester sauce), 1 large bottle (64 oz I think) of tomato juice, a can of beef broth, a can or 2 of beans, and a can or 2 of corn. Let that simmer on low all day. Throw in a 16 oz bag of your choice mixed veggies at least 30 minutes to an hour before serving (I usually throw them in right after lunch if I'm home). Along with a frozen loaf of garlic bread it is a yummy and somewhat healthy meal that even my picky kids will eat. Go for low sodium in the canned items. . . .
