Need Recipes for Diabetic Friendly Birthday Cake

My husband grandfather is diabetic and is going to be here for his birthday. Do you know of any Birthday cakes recipes that are Diabetic Friendly....? But still taste good enough for kids!!!!

You can substitute in any recipe -- trans-fat/cholesterol free butter substitute, splenda instead of sugar, applesauce instead of oil. The only thing that might affect taste would be the splenda. The other things affect consistency (might be more "cakey" rather than light and fluffy).

There is a store on North Beach Street called Diabetic Design.

They have a lot of cake mixes (frosting too I think), supper and other foods and goodies, toothpaste, meds, shoes, socks and other things that can help you out. They also have cakes and pies. This is their website:

i have one that is extremely easy, it is not completely sugar free but its great! and my diabetic grandparents can eat it. you just take a box of white cake mix and do it as directed, and when its done baking let it cool and cut it in half horizontally, and spread sugar free preserves between the layers, i use raspberry or strawberry, then put it back together and ice it with cool whip, and put shredded coconut on top and on the sides in the cool whip. its great! and really easy! and my daughter loves it and she has no idea it is low in sugar! i hope this helps!

You might take a look at splenda.com; they have some great recipes. I've used splenda in place of sugar in alot of recipes but I usually cut the splenda back a little.
