How do you prepare polenta?? I have the plain yellow corn powder.... It's for my 7 month baby.Thanks!

For a soft polenta or grits, the proportion is 4:1 water:dry polenta--it depends a bit on whether or not they are stone ground (require more water and longer cooking) or a quick cooking type. Bring the water to a full boil, add a bit of salt and butter or olive oil. Whisk the ground corn meal into the boiling water, reduce the heat, and cover. Cook on low, stirring occasionally, should be ready in about 10 minutes. You can add breastmilk or formula to bring it to a soft enough consistency and cool it off.

Corn is a known allergen, so if you're a mom that worries about those things, you might want to hold off for a few more months.

I like to make it into patties and sear them in olive oil with rosemary. but not for a baby. I would probably make a thin porridge for a baby.

I love polenta! Being from an Italian/Polish family we make it with a meat sauce. I can't spell it but we called it Polenta and Toutchille. We made it as the bag/box/tube suggests. Then pour in a glass pie pan. Then we make it like a lasagna. Polenta, then brick cheese or mozarella, polenta, then meat sauce and add peas. My husband doesn't like it and my kids will eat it. But I don't make it unless my parents and brother are around to eat it.
