Hi! I’m looking for some new lunch ideas for things that I can take and eat at work at my desk. And healthy snacks too.

I eat Amy's lunches. They are in the health food category, but they are the only thing I could find between diet food and tv meals. Around $3.50 at Target.

One thing that comes to mind that I make for my husband, and I :), all the time is a shredded chicken breast mixed with this "salad." Sometimes I heat it up, sometimes cold, I like it both ways. I will make this "salad" and have it in the fridge often to pair with things. Hope you like it!

1 can of drained corn
2 cans of drained black beans
1/2 chopped red bell pepper
and as many chopped banana peppers as you like with a little juice mixed in

I personally don't care for prepared frozen meals... I usually freeze soups and leftovers in single portions.
I am a sandwich or salad kind of gal for lunch and love to keep lots of salad stuff on hand and sliced turkey or chicken, hummus and pita bread/chips, cucumbers, guacomole 100 calorie packs, tortilla grilled cheeses, etc.

I love just whole grain crackers, cheese and fruit too. Or I make chicken salad and take crackers. Soups are great.

I just went from an outside sales job to one in an office again.

I bring lunch 3-4 days/week. A lot of times, it's leftovers from the night before. We have a fridge and a microwave that I can heat things-up if needed. I often bring a sandwich (I do a lot of pitas with meat/cheese and microwave them) and some fruit/yogurt. I made lasagna and salad the other day. I've done left over turkey burgers which I heat and have some veggies/fruit with.

I take a collabsable cooler with ice packs in them which helps keep things cool if there isn't refrigerator space.

A lot of people do frozen meals, but I think they're really high in sodium.

Healthy snacks: string cheese, 100 calorie popcorn, cut veggies, fruit, Special K Crackers, Fiber One or Kashi bars, goldfish, sunflower seeds, peanuts.

When I worked I always took frozen meals-Lean Cuisine, Smart Ones, and Healthy Choice. Some snack ideas are any of the 100 calorie packets, carrot sticks, pretzels, apples or bananas or dried fruit.

Hi E.! I'm not sure what you like to eat at lunchtime but I love to eat pinwheels at my desk. They are small and don't make a mess and they are filling. Here's myrecipe but you can add or omit anything you like.

Flour Tortillas (the flavored ones are even better)
1 package of cream cheese
2 chopped green onions
salsa (any kind, I like Pace Medium)
3-4 thin slices of any lunch meat.

Blend cream cheese and salsa then add green onions. Spread the mixture on a tortilla and then place you lunch meat to cover the tortilla, roll, cut and refrigerate. You will be able to make alot with the amounts I've given you so the kids and husband can all have some. Enjoy!
