Looking for Bean Recipes

SInce you guys have been so helpful about my other questions, I KNOW you can help me with this one! I bought a 20 lb bag of pinto beans at a super good price and in my excitement made a HUGE pot of them, forgetting how much they grow... Now I have many many beans and am looking for some yummy recipes to use them in! I have already done: pork & beans; refried beans; zucchini and beans fried with bacon (the kids LOVED that one--who'da guessed...); and just as a side dish. I know I can google it, but there are so many, so I'm looking for some tried and true recipes. :-)

I freeze the cooked beans... I put 2 C of beans in a freezer bag, and add a bit of the bean liquid. That way I have some ready when I need it.

I don't add any seasonings or salt when I am cooking them... I wait until I put them in the dish to add seasonings.

I have about 15 bags of different beans in the freezer (red kidney beans, black beans, garbanzo beans, white beans, black-eyed peas) all ready to add to a meal!

1. bean and cheese burritos. Just put them in whatever your favorite tortillas are (I use low carb whole grain tortillas), add cheese, roll up and bake at 350 for 15 min. Yum! Serve with sour cream.

2. Add ground beef or ground chicken and make your favorite chili recipe. Let me know if you want a recipe for it.

3. Make a bean salad - add corn, diced tomatoes, diced red onions, etc, and oil and vinegar salt and pepper.

4. rice and beans, again let me know if you need a recipe.

5. Puree them to make bean burgers. Add an egg and breadcrumbs, minced onions and spices. Shape into burgers, put in the fridge for an hour. Once firm, bake or fry or grill.

One of my quick, easy, cheap meal go-to's is tostadas. I always keep canned refried beans and the store bought shells in the pantry. I always have lettuce and shredded cheese so there you go! My hubby and kids LOVE them and they are so easy, bascially no cook which is great in the summers here. Good luck!

food.com and put pinto beans in the search engine. Lots of recipes popped up. You might want to freeze a bunch of them so everyone doesn't get sick of them. My family will only eat one item for about 3 meals then they never want to see it again. Good luck!!

Rancheros beans:
Cube winnies, bacon, onions, tomatoes and jalapeno (or pico de gallo) and cook in a pan with a little oil, then add this to your beans and put more water , salt and enjoy, you can skip the jalapeno for the kids. its suppose to look watery

Nachos

Bean enchilada with either flour or corn tortilla

Stacked enchiladas-flour tortilla covered with refried beans and topped with ground beef, cheese, lettuce, tomato, sour cream, salsa and a fried egg

Taco salad-just like the meal above but on top of lettuce and served with tortilla chips on top
