I Need a Good Chili Recipe

Hi ladies,

My husband loves chili, but I've never made it before. This year we got a lot of great tomatoes, peppers and onions out of the garden, so I thought I'd try my hand at making him a batch. Do any of you have any family-favorite recipes, tips, or cooking suggestions (ie pot or crock-pot, etc). I'd love to hear anything you have to offer. :) Also, if you have any good salsa recipes or canning tips/tricks, I'd love to hear those too! Thanks in advance!

If you go down the aisle in the grocery store that has the gravies, they usually have several kinds of chili seasonings too. You can go by the recipe on the back, or you can use it as a base recipe and personalize it to your taste.

I love this recipe! It's so open to personalization, and it's bean-free. (I'm not a fan of beans) :) Hope you and yours enjoy it, too!

4 pounds coarsely ground sirloin
Olive oil or butter
2 (6-ounce each) cans tomato paste, thinned with water
3 to 4 medium onions, chopped, about 3 cups
1 green bell pepper, chopped, about 3/4 cup
2 to 10 cloves of garlic, minced (or to taste)
3 tablespoons chili powder, or more to taste
1 tablespoon ground cumin
1 tablespoon dried oregano
1/2 teaspoon dried basil

1. In a 4-quart pot, cook meat in a little olive oil or butter (or a blend of the two) until no longer pink. Drain excess fat.
2. Add remaining ingredients and simmer 2 to 3 hours with the lid on.

Makes 6 to 8 servings.

I make chili pretty much the way my Mom did...

1 lb ground beef
1 large onion diced
1 large can Campbells Tomato soup or substitute tomato juice
1 green pepper
1 can stewed tomatoes diced or use your fresh tomatoes
hot sauce(optional)
1 can Bush's mild chili beans w sauce
1 can of kidney beans drained
chili powder (2TBSPs or to taste)
salt
1 large can of water from the soup can

Add diced onions and the green pepper to the ground beef in a large pot. Brown meat and veggies draining off the fat a few times. Once browned add tomatoes, beans, and tomato soup. Bring to a simmer and add chili powder. Let cook for as little as 30 min to as much as an hour.
I serve with cheese and let everyone decide their own spice factor.

Great and Easy Chili

3 tbs olive oil
1lb ground turkey
1 can stewed tomatoes 16ons size
1 can dark red kidney beans drained
chopped onions
garlic minced or crushed to taste
chili powder to taste
cumin to taste
1 bay leaf

Saute the turkey with the onions and garlic in oil until it is
no longer pink. Stir to avoid sticking to the pot.
Add the tomatoes and beans, mix well. Pour the chili power
into your hand, check to see how much is there then add as
much or as little as you want, do the same with the cumin.
Stir everything together, add the bay leaf, cover and simmer
over a lower flame for about 2 hours, taste to see if it needs
more of anything.
Remove bay leaf before serving. We like oyster crackers on top,
some folks like sour cream or shredded cheddar cheese.
You can double or triple this recipe as needed.
