Good, Freezable Morning Egg Bake Recipe?

In an effort to get protein in my kids through eggs every morning for breakfast, I'm looking for an egg recipe that I can cook in a muffin tin & then freeze. I'd like to take those out of the freezer every night, put them in the fridge overnight & pop them in the microwave in the morning. I remember 7 or 8 years ago, when I did the South Beach diet that there was a recipe like this. (My attempts to find it online haven't led me to it again.) I'm thinking that spraying the muffin tin with some olive oil & pouring in a mixture of eggs, milk, veggies & cheese work, but I'm wondering if anyone has any better recipes. Thanks!

Thhis is not the O. you're looking for, but here's a super fast & easy recipe:


2 EGGS
2 Tbsp. milk
2 Tbsp. shredded Cheddar cheese
Salt and pepper

1. COAT 12-oz. microwave-safe coffee mug with cooking spray. ADD eggs and milk; beat until blended.
2. MICROWAVE on HIGH 45 seconds; stir. MICROWAVE until eggs are almost set, 30 to 45 seconds longer.
3. TOP with cheese; season with salt and pepper.

Eggs are so forgiving. My husband and I have been doing this for years. We take whatever is in the veg drawer, frozen veg, cheese, sour cream, cottage cheese, herbs, eggs, milk and cheese and put into a greased pyrex baking tray. sliced mushrooms, olives, tomatoes, broccoli, spinach, onions, potatoes, asparagus and brussel sprouts, bacon, steak, breaded chicken the skies the limit. Bake until cooked then slice into rectangles. We wrap with tortilla and store in the fridge/freezer depending on when we thing we'll get to it. individual breakfast burritos. These heat up really well in the toaster oven, but could be microwaved too.

A weeks worth of cooked breakfast and a clean larder.

The beauty of this kind of meal is that you can add whatever is around or whatever your kids will eat. My italian cookbook calls this a fritata - although it's prepared jsut a little differently.

I put a few small cubes of bread in the bottom and pour egg mixture over them. The egg mixture can include diced red peppers, ham, cheese, brocoli, spinach, turkey, grilled chicken breast, etc. Whatever you have leftofver can be mixed up with the eggs - or even frozen veggies. Two tips: 1 - add some water to the mixture - as the water turns to steam it will form bubbles and make it airy/fluffy 2- if you want to reduce fat / cholesterol use more egg whites and less egg yolks.

Finally - if cleaning the muffin tin gets tedious you can use a corning ware baking dish and cut the whoe thing into squares or you can use large ramekins / small baking dishes. They clean off more easily in the dishwasher than the cupcake tins.

I've been doing this kind of thing since my kids were young. I'd much rather they have protein in the morning than cereal. ;o)

I'm bookmarking this post. Cool idea. Never heard of it. THANKs for posting.

As for me and my 2.5 yr old, we make a lot of french toast. The night before, I put in a sandwich bag: 1 egg, splash of vanilla, sprinkle of cinnamon, and a slice of healthy cinnamon raisin bread (I buy the expensive Ezekiel bread in the frozen section of the grocery store. Purple bag. Keep it in the freezer and pull out one piece at a time for french toast only).
So in the morning the bread's thawed and has soaked up the whole egg. Takes only a couple of minutes to cook it in a pan with a little butter. We top with maple syrup.

So --- not quite what you wanted, but an alternative. Yes it requires a little more work than you wanted in the morning, but a lot of the work is already done by the time you wake up. And it's got a whole egg and a whole slice of good bread in it. Healthy and filling and protein.

Great idea! I searched my favorite recipe site and am making this right now:

Ham and Veggie Egg Muffins

6 eggs
2 tablespoons 1% low-fat milk
4 slices black forest ham
1/4 cup red bell pepper
1/2 small yellow onion
1/2 cup white mushroom
1 tablespoon Italian parsley
1/2 cup cheddar cheese
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon olive oil

Directions:
Prep Time: 5 mins
Total Time: 25 mins
1 Chop and Saute all vegetables and ham in olive oil until tender.
2 Spray Muffin tin with non stick spray.
3 Evenly distribute vegetables in a muffin tin.
4 Sprinkle shredded cheese over vegetables.
5 Scramble eggs milk salt and pepper in a bowl.
6 Evenly distribute egg mixture into muffin tin should be no more than 2/3 full.
7 Bake 350 degrees for 15 to 20 minutes top should be golden brown.

Not sure about reheating, but i'd assume 1 minute or so in the micro would do it.
