Any good dessert recipes for a Girl's Night In for 5-7 people. We'll be eating dinner and having drinks. I would like something easy, chocolately and somewhat healthy, but I'm definitely open to other options (ie not so healthy). Probably most open to something easy to prepare. Thanks!

Oooh...here is one of my favorites. Get a jar of marshmellow puff, ya' know jet puff, and a small container of cream cheese. And just mix it together. You can control how sweet it is by adusting the ratio. Then just get your favorite dippers. Apples, strawberries, bananas, brownies, pound cake. It is so good people will rave about it, and it's about as easy as it gets! Have fun!!

I have been learning a lot more about nutrition lately, and what I'm finding out is that anything with chocolate (it's the sugar) is NOT going to be healthy, so you might as well make something that is really delicious!! :)

Chocolate chip cookies may not be "fancy" enough for what you have in mind, but I promise these are the best cookies you have ever tasted and super easy to make; almost everyone who ever eats these asks me for the recipe. Even if this is not what you want for your event, you may want to keep this recipe for another time (and they are NOT healthy!:)

1 c. (2 cubes) butter, softened
1/4 c. sugar
3/4 c. brown sugar
1 pkg. (4 serv) instant vanilla pudding
1 tsp. vanilla extract
2 eggs
3 c. flour
1 tsp. baking soda
2 c. chocolate chips (or any chips of your choice)

Combine butter, sugars, pudding and vanilla, beat well. Beat in eggs. Combine flour and baking soda in separate bowl, then combine with butter mixture. Stir in chocolate chips. Spoon onto baking sheets (I prefer air bake sheets) and cook at 350 degrees for 10 minutes (a little longer if you prefer them to be more firm/crispy than soft/chewy).

Hope you enjoy your Girls' Night In! Sounds like lots of fun!

Yogurt Pie

1 graham cracker crust
1 16oz. tub whipped topping
1 8oz. container of your favorite yogurt

Combine the whipped topping and the yogurt together in a mixing bowl. Pour into the cracker crust, freeze. Take out of freezer 5 to 10 minutes before serving.

Optional: If you use a fruit inspired yogurt (strawberry, blueberry, etc.), top your pie with berries before serving.

Yum! Always a pleaser at potlucks!

There is a good recipe for a flour less chocolate cake, at www.allrecipes.com It's very rich and would be great with drinks. It's hard to have chocolate and have it be healthy too, but a compromise maybe a chocolate fondue with fruits to dip with. Enjoy your girls' night in.

Fruit dip-

one tub cool whip (any kind)
small package vanilla pudding
amaretto

mix the cool whip and dry pudding mix together with a few splashes of amaretto and mix together. So yummy to dip fruit and angel food cake in, works as a good filling for strawberry shortcake too.

Ohh, do a chocolate fondue! It is easy peasy and can be served with fruit (healthy), marshmellows (no fat), and whatever else floats yoru boat. It you don't have a fondue pot (cheap to buy) you can always just use a regular bowl, and if teh chocolate strats to get hardish- then just pop in microwave again. Sounds fun!
