Freezing/storing Homemade Cheesecake

Anyone know anything about freezing cheesecake?

I am making a new york style cheesecake ahead of time for a family get together that is next weekend. So I guess really, I am questioning whether I need to freeze it at all or if it will be fine in the back of the fridge for a little more than a week.

If I do freeze it, any pointers on how to wrap it? I've made this recipe several times but never tried to freeze it. I know they sell frozen cheesecakes in stores so I guess it can be done...

The thing is I am hosting almost 20 people for a whole weekend so my strategy is to make the desserts ahead of time so that in the last days before they come I can concentrate on the main dishes which'll still be fine in the fridge for a couple days and this way I can focus on last minute things that just can't be made ahead like salads and won't end up standing in the kitchen the entire time while my family hangs out!

So any pointers about storing cheesecake?

Hi there. I was a commercial baker prior to entering the military. Hopefully I can help.

1. You can absolutely freeze your cheesecake. I recommend slicing before you do, just to make things even easier. Put it into an air tight cake-carrying box (tupperware) with none of the wrapping touching the cheesecake (or it will stick when you try to remove it).

2. When you thaw it, put it into the fridge for a day. Don't just pull it out and place it on the counter. This will help it not to "sweat" so much.

Cheesecake does well in the freezer. Just wrap in air tight freezer wrap and freeze.

yep, you can freeze cheesecake! As Liv B. said....air-tight freezer wrap. My friend who is the Cheesecake King (his are to die for!) uses aluminum foil, several layers...& then a 2 gallon Ziploc which he seals the air out of. :)

smart planning, mama!
cheesecake freezes beautifully. wrap it snugly in saran wrap, then tin foil, and just remember to put in the fridge the day (or two) before your guests arrive.
