I LOVE venison!! I've never had any special recipes for cooking it. My family just basically used it in place of beef. My favorite way is to just "pan fry" the backstrap....We just sprayed our cast iron skillets with something like Pam spray, and threw in the backstrap pieces (about 1 1/2 inches square), keep turning them until they are cooked through. You can use any spices you like to coat the pieces before you cook them. My favorite was to use a seasoning called Jess Hall's Serendipity Salt/Seasoning. It's made in Weatherford, and I had found it at some local grocery stores, but if you can't you can go to their website www.jesshall.com. Daddy also used beer batter for cooking a lot of our deer meat, too, but I don't remember the recipe for the batter. I'll try to call him and ask for ya.

Hi C. S.
I usually soak my venison in milk for several hours.
I have a recipe for frying it and baking it.

For frying:
soak in milk to take out the gamy taste.
drain and use tenderizer for a few hours.
Season with salt and pepper
flour (you can use crushed red pepper as well)
Fry in a peanut oil.
- it makes up a really crispy crust.
You can use the drippings to make a gravy and steam some rice.

For baking -
soak in milk to take out the gamy taste.
drain and use tenderizer for a few hours.
Season with salt and pepper and garlic salt/pepper
cut two medium onions, four medium potatoes and a bag of
baby carrots.
put meat in a roasting pan with carrots, onions and potatoes and bake at 350 for about an hour and a half.

It is yummy licious!

Hey C. my husband is a huge Venison hunter and we usuall google and put wild venison recipes in the search engine and it brings up a whole bunch for you to choose from. One of my favorites is Venison marinated in molasses and black pepper. The directions are long but worth the final dish. I can fax it to you if you want. Good Luck!

Mama Jo's Venison Roast Recipe

1 venison roast
1 chopped onion
chopped carrots
4 chopped new potatoes
2 cans - cream of mushroon soup
1 package - onion soup
1/2 tsp salt & pepper
1/2 tsp garlic salt or garlic powder
1 cup water (no more than that)

Put all ingredients into the crockpot and put on low heat for 6 hours. Then serve. Very easy!
