What to Do with 15 Dozen Eggs? How to Store?

I just scored 15 dozen eggs and now have to figure out what to do with them. Does anyone know if I can pasteurize them somehow so I can freeze for later use? Or if I can just freeze them?

Eggs do not require refrigeration. They last for quite a while at room temp. In every other country I've lived in, eggs were sold in cartons off the shelf, not in the refrigerated section like here in the US.

Still, it's a lot of eggs. You might make a few quiches or frittatas that you could then freeze.

You can not freeze eggs. When they freeze they can expand and crack letting in bacteria.

I would hard boil some. I'm not sure how long they would keep but you could use them for all sorts of things. My girls love to eat them by themselves.

Other than that I would find out how long eggs stay good and keep what I thought I would use and give the rest away.

Sometimes when I bake a bunch (cause the banans were black or my MIL gave me 1000 apples!) I always give some away to the neighbors, they love it. In fact now we all give eachother stuff. Leftovers from bbq's, bread we got on sale, beer we didn't drink from camping. Seriously it's good times on our street! You never know what you'll find on your doorstep.

I would make tons of egg salads, bread, cookies, cakes, tuna salads with egg, hard boiled, deviled eggs... HAVE A PARTY INVITE PEOPLE OVER TO HELP EAT THEM!!!

you can bake and freeze the bread, cake etc. and GIFT them away to people!!!

How long will an egg keep?

Fresh shell eggs can be kept refrigerated in their carton for at least 4 - 5 weeks beyond the pack date. Quality losses should be insignificant if the eggs are refrigerated as soon as possible after purchase from a refrigerated case.

Hard cooked eggs should be kept in the refrigerator for up to one week.

If you like quiche, it uses a bunch of eggs and you can freeze the quiche after it cooks to eat whenever. My kids love it and you can hide all kinds of vegetables and meats in them.

my friend freezes egg whites... so I'm sure it can be done.

And yes... they stay fresh longer, but eggs do not require refrigeration... so you could leave some on the counter if your frig is full.

I buy my eggs 5 dozen at a time from a local farm and they last for a couple months in the fridge with no problem. I have always used them before they go bad, so I imagine they could last even longer than the 2 months it takes me to eat them all. When I first started buying them in bulk I wasn't sure how long they would last, so I froze them. I would put the whole eggs in the freezer, just like the lady who sold them to me said to, and it worked fine. She did recommend poking a small hole in the top of each egg so when the insides freeze and expand they won't crack the eggs. It never seemed necessary to me, though. Freezing the eggs did alter the consistency slightly, making them a little thicker.

definitely go GOOGLE your question: How to freeze raw eggs...or something. I would think you could crack the raw eggs into containers say for scrambled eggs and freeze that way. Take it out the night before to defrost and scramble away.

I use to work in a bakery and they would get their eggs in a big plastic containers frozen. So, you can crack the eggs and put only the white/yolks, no shells, make like you are going scramble them, whip them good first, in a plastic container and freeze. When you want to use them defrost and mix them up again. If you measure them up and mark your containers with the amount of eggs that are in there that will help you when you go to use them. Eggs last for quite a long time in the fridge. As far as freezing them, I heard that you could freeze them. Crack them into ice cube trays and freeze them. Wehn they're frozen you put the cubes in a freezer bag and take out what you need when you're ready. I hadn't heard that there was any healoth concerns connected with this, so you may want to do a little research about it. It's great when you get blessed with things like this, even if it means that you have to get a little creative? Good luck.

Another idea: You can boil some, or make a breakfast casserole to give to the hungry homeless. Check out this website:
http://www.urbanoutreachaz.org/ on Mondays and Fridays they let the homeless come in take a shower and they give coffee and food if donated it's from 6 am - 11 am. It is a non-profit organization.

from what i understand, you can leave eggs at room temperature, the keep eggs cold is a farce.

We have cracked eggs in the past, scrambled them (uncooked) and then froze them in plastic containers. Make sure you write on the container how many eggs are in the container.
