What Do I Do with Tofu?

I decided to buy some tofu when at the store, as I've heard it's so great for you. Any ideas what to do with it? We're health-food amateurs, but we're trying!

I buy the firm kind, crumble it, and put it in the ricotta/cottage cheese layer of lasagna. You can't even tell it's there!

If you bought the firm kind (which I recommend) then you cut it up in smaller pieces and fry it with scrambled eggs - YUMMY that way! I also cut it up in smaller pieces and put it in stir-fry veggies and put the stir-fry over a bed of rice. Those are my 2 favorite ways of eating it ... season it the same way you would anything - although I don't ever use salt in our house ... I use fresh garlic, pepper etc like that.

Good for you - it's a fantastic way of getting more protein in the diet!

Smoothies! My younger one is a picky eater, so this is the main way he gets fruit.

Put some ice in the bottom of your blender, followed by half a block of tofu (we buy the kind in the cardboard box that doesn't need to be refrigerated until opened -- put the other half in the fridge). Fill until an inch from the top with frozen fruit -- our favorites are pineapple, mango, peach, and strawberry. Pour in a healthy juice (we use V8 Frusion) and blend.

If it's firm I have sliced it up seasoned it and fried it in a skillet. Not real healthy but a better alternative if in need of a greasy fix.

This is the most amazingly decadent dessert...in our family we call it 'secret ingredient pie' because if you don't tell anyone it's made of tofu they will think it's fabulous...but if you tell them first they're likely to not want to try it! mmmm....makes me want to go make a pie...

I try to buy extra firm tofu, dice it or cut into fun triangles and do the following
-bread it and bake it
-marinate and bake it
-fry it with soy sauce and veggies
or crumble it and fry it into burritos with taco seasoning.

If you bought soft tofu that is more for like making pudding and whips, I'm not really sure how to cook that.

Tofu is nasty plain (unless you are a baby they don't seem to mind) so remember that it takes on whatever flavor you add. (we like curry, peanut sauce, teriyaki sauce, soy sauce...)

We also put it in our lasagna.

Keep trying if you don't like how it turns out at first!

Oh one other thing. We freeze our tofu in the packaging and then thaw it out. It makes it easier to squeeze out all the extra water and then it cooks a little quicker and firmer- less falling apart when you are stirring it on the stove.

I press it wrapped in a towel between two plates and weighted down with something.

I stir fry it with veggies and teriyaki sauce. (I like Soy-Vey).

Your kids might eat it plain, cubed, if they are young enough. I don't generally like it myself, but it is good in stir fry and my son also likes it in soup. I find that if I flavor it with soy sauce I can get over the texture. Google tofu recipes too.

It is a great source of protein!

What you can do with it really depends on what firmness you bought. If it's firm, you can cube it up and use it how you would meat: hotdishes, soups, etc. You could do stir fry with vegetables, cubed tofu, and the seasoning of your choice (I like lemon pepper).

I've used the not-so-firm tofu in vegetarian lasagna, in lieu of ricotta cheese.

You can also blend it into smoothies and shakes!

I personally would throw it away...LOL, but I know my mom used to make Tofu Enchiladas. I wonder if you could find a recipe online? Good luck in your health endeavor!

Well, I don't know exactly what you do with it either, but one thing I have tried is smashing it up and mixing it in with macaroni and cheese. You couldn't taste it and it adds some calcium and protein. My kids sucked it down. I've also heard of people cutting it into little chunks and putting it in their stir fry.

I like the softer consistency for breakfast - mix in a chopped up banana & some granola. Yum!

We all love it in stir fry! It takes on the flavors of whatever you're serving. It's also good in soups!

My son likes to eat tofu cubed, then dusted with crushed up crackers or cereal.

My husband and I found a great way to bake tofu that gives it a meatier texture and tastes really yummy:

Take extra firm tofu and slice it into six slices. Place those slices on several paper towels, put more paper towels on top, then place a heavy object (such as a cutting board with a heavy pot on top) on the slices. Let the water press out for about 10-20 minutes, or more if possible. Preheat your oven to 425. Cut the slices into smaller cubes and place them on a cookie sheet sprayed with cooking spray. Brush 1-2 tablespoons soy sauce on the cubes, then coat them with more cooking spray. Roast the tofu for 20-25 minutes, or until they are crispy on the outside.

You can use these cubes in any stir fried recipe, although you will want to snack on them right out of the oven! Delicious!

One of the easiest things you can do with tofu is crumble it into any kind of spaghetti sauce (home-made or from a jar as you are heating it up on the stove). You won't be able to taste the tofu in the sauce, but it will add extra protein to whatever pasta dish you are serving.

When people tell me they don't like the texture of tofu, this is what I usually suggest.

Vegetarian cookbooks often contain good tofu recipes. You might want to check out one or two from the library to see what appeals to you.
