What Are You Making for Dinner on Easter?

Growing up, Easter with our family was a lot like Thanksgiving. We would have ham or turkey with all the fixings. Now that we have moved away from family, all I need to do this year is prepare something for my little family of four. I keep thinking of some ham and potatoes au gratin, something like that. My husband doesn't like potatoes prepared that way. SO...I am stumped, and he doesn't even know it because we haven't discussed Easter dinner! What are you making?

Traditional Easter dinner in my house was Leg Of Lamb - to Symbolize the sacrifice. I can not bring myself to do that! We always had deviled eggs because back then people hunted real eggs. :)

You could buy a rotisserie chicken and make sides and a dessert
You could do a backyard bbq
Make a roast in the crock pot
Make prime rib
Have steaks and baked potatoes

We are doing potluck and I'm bringing dessert. I'm making a chocoalate pudding pie using sugar free fat free white chocoalte pudding, whip cream, and milk, spread in a ready graham crust and topped with more cool whip. It's light but doesn't taste like diet food. You wont miss the extra calories.

So glad I get to stay home this year and don't have to schlep my family across 2 states to cook at my MIL's house, its just me, DH and the kids and maybe his aunt. So I'm making foods that I want to eat. Honey glazed bone in ham, green beans almondine, corn, and mashed potatoes with lots of gravy, and a no bake cheese cake for dessert.

For health reasons my husband is a gluten-free pescetarian. Yeah, that makes it real fun to plan a big dinner for a lot of different folks. So, we are having pork loin with a cherry/plum balsamic vinegar sauce, polenta and sauted brussel sprouts. I will also grill a piece of salmon for him. Fresh fruit for dessert.

Easter and all holidays are just the 3 of us. Daughter is 17 now and her boyfriend joins us but for the most part, I have always done the traditional meals for the 3 of us.

I will be preparing a prime rib, mashed potatoes, asparagus, glazed carrots, au jous, horseradish and probaby some up with other things we love and will make smaller dishes.

We are not big dessert/sweets eaters so if we have dessert, it will be something daughter makes because she loves to cook.

It's just the four of us for Easter too, it has been for a good many years. I'm making a boneless pork roast, a spring salad (mixed lettuces, gourmet carrots, pears, dried cranberries, pecans), cheddar mashed potatoes and brussels sprouts sauteed with bacon and red onions.

We're having rack of lamb, scalloped potatoes, salad with asparagus and oranges (epicurious recipe) and lamb cupcakes from the Land o Lakes website (using mini marshmallows to make the fleece) - I'm also making some chocolate kahula icing for the grownup cupcakes. With 3 kids under 6 I don't have time/energy for two desserts so this is my solution!!
Oh and rolls...
You could always do twice baked potatoes.

We are also lamb people!! It's so delicous I just can't wait! I know it's a meat not a lot of people are comfortable eating/cooking, but it's seriously yummy! You could get just a small leg for your family. If you do, make sure you go with just a simple garlic, oregano, salt and pepper seasoning and stay away from mint jelly at all costs! ;) I do really like ham too and that's pretty popular for Easter. This year we may actually be having both! I like spring dishes like asparagus and peas to go with Easter but I'd never turn down a potato either! ;)

ham, (usually lasagna)but this year penne with vodka sauce, salad, dinner rolls, and before dinner we have cheese n pepperoni n olives n stuff like that

Hi K.!

I read the other responses, and my answer is unlike any of them so you may just laugh and move on! ;)

I have little children, so I want to make something that is special to them and that emphasizes what Easter is and what we are celebrating so...

We are having breakfast for dinner (primarily because it's more of a novelty and because the morning is busy getting everyone ready for church...), and we are having Empty Tomb biscuits, eggs and fresh fruit. For dessert we will have Easter Story cookies that we make together the night before.

I've been pondering this same question all week and finally told my husband today, "So I guess I'd better cook something" I don't know what we have been doing these past almost 9 years we have been married! Sometimes we were around family and I have no clue about the other times when we weren't! But just read a post on here and think I will make a Lasagna! Sounds easy enough!
My mom always makes a roast, ham or something of the sort with all the trimmings! Good Luck!

Similar, I grew up having an Easter "spread" with lots of wonderful items like salmon, glazed ham, lamb, goose, eggs benedict, etc. Past few years we've done stuff like going to brunch at the country club with relatives, or smoking a turkey at home. This year I'm doing surf and turf at home. I've got a few filets in the freezer from our grass fed cow, paired with some fresh salmon I got yesterday. Making some bacon-wrapped asparagus spears (yum and easy) and probably some form of potato or fresh biscuit. No-bake cheesecakes for dessert. (this year it's just the hubs, who doesn't care for lamb, and our two 4 year olds eating so that ought to do it.) Keep it simple enough for the kids (meat and potatoes) and elegant enough for you (nice place settings and dress up). :)

PS I love reading what everyone else does for their Easter spread!

This year it's just my daughter and me, so I'm making reservations :-)

If I were making a meal, it'd be...ham, green bean casserole, hawaiian salad or a fruit salad, creamed corn, mashed potatoes, sweet potato casserole, relish tray, rolls, and possibly a green salad.

My husband and I brainstormed thinking outside the box and serving something different! Then I bought the same old ham. OH well, it's easy and can be served right after church. I bought asparagus to go with something I dont usually serve. and he suggested strawberry shortcake for dessert - a nice fresh Springy dessert. Mom and Sis will bring side dishes.

K., we used to be the same way. now we do different menu items because we were bored with the old! We will; be having prime rib, asparagus, risotto and strawberry cheesecake triffle. I love to bake, so I will be making bread as well. Happy Easter!!
