What Are You Making for Dinner?

I'm trying to do some serious meal planning, but I feel like I have no good ideas. What have you been eating for dinner in your house, and what are you going to eat?

This week we had black bean soup and sandwiches, roasted chicken and red pepper cream sauce pasta, chicken florentine, pizza on the grill, baked mostacholi and homemade meatballs. We also had jimmy johns.

Please share what you've been eating.

Jimmy Johns is a sub place ... birth place is Charleston, Illinois, where I went to college :-) Love Jimmy Johns!

We're Catholic, so tonight will be baked tilapia, seasoned veggies and rice. I usually make baked fish or a dish with shrimp, though sometimes I buy fish from the deli for a different taste. One of these Fridays I'll probably make potato soup.

I'm not in the North East, but it's cold enough in Central Illinois for me to be craving some chilli!

what are jimmy johns?

last night it was chicken with thai peanut simmer sauce, sugar snap peas, peppers and onions.
tonight i think it will be black bean burgers with chipotle mayonaise and broccoli on the side.
been craving a lentil soup, will put some on the crockpot soon.

My hubby made Chyicken Tikka Masala with yellow rice and Naan.
I made fried chicken, mashed potatoes, gravy and fried squash.
Struffed green peppers (stuffed with fried hamburger, onion, diced pepper and seasoned tomato sauce) topped with melted cheddar cheese and salad.
Grilled cheese burgers, fries and fresh veggies with ranch to dip.
Tonight I'm making spaghetti, garlic bread and salad.

Since we save a lot of left-overs, once a week or two we have a "fend for yourself" night where we all get to eat on whatever we find! :)

The last few days it's been homemade turkey spaghetti sauce. We've been using different things to go under the sauce, including pasta (usually whole wheat instead of white) quinoa, brown rice/quinoa, mixed fresh sautéed veggies (broccoli, cauliflower, pea pods, etc) or whatever catches our fancy. Tonight we're using some of the sauce as a base for homemade pizza. We've also frozen some of the sauce for later use.

Last week we had homemade chili. Well, I used canned beans, not dry, but that doesn't count. We used some of the chili to make sloppy joe's, which is a hit in our family. Again, we froze some of the chili to use again in a few weeks.

Next week I'm pondering doing a veggie stir fry although I may wait a bit for some more early spring veggies to come in.

In the winter, we often make hearty meals like spaghetti, chile, homemade lasagna, et., that we can use for several meals that also freeze well for later use. I know that I get frustrated and tired of having to make dinner every night, and keeping it fresh so the kids will eat it. That's when I make things like spaghetti and chili, I try to spice it up with the thing that do under/with it so things don't get boring. Also, to help with the meal planning, I try to make foods that last for more than one meal, so I'm not cooking ever night. Freezing also helps, if you have the space, for those crazy nights when you just don't have the time/energy to cook.

Also, I often engage my nieces in helping me cook dinner, and they look it. Maybe you can involve your kids in the cooking or meal planning? Would that be a help?

Can't wait to see what others have to say. I need some new ideas.

Lately I have been horrible at dinner. We have been eating a lot of premade foods. Trader's beef lasagna, chicken lasagna, enchilada's, Campbell's tomato soup with a spoon of rice - just to fill us up, sandwiches, burritos, mostacholi - which I had to look up, as we just call it baked pasta, premade roasted chicken with veggies.

I need to do better!

I picked up some liver today. I will stir fry it with lemon juice, garlic and parsley. Mashed potatoes and creamed corn on the side. Last night was macaroni casserole. Haven't figured out Saturday yet. Sunday I will roast a chicken.

I do not feel like cooking anything. I will probably order cheese pizza tonight. Last night I went to bed when I got home. My husband finally gave in on me making dinner and cooked eggs and turkey sausage with beans on the side for everyone. I don't remember if I ate anything last night. We had tilapia the other day with asparagus and carrots, stir fried beef with broccoli the day before that. We also have pasta with alfredo sauce and veggies often during the winter. My kids don't consider sandwiches to be dinner so if I buy Subway, they ask me what's for supper later. (I don't like Jimmy Johns)

Tonight is chicken Alfredo pasta with broccoli, this week we had soft tacos and rice, honey teriyaki pork tenderloin with rice pilaf and green beans, spaghetti and meatballs, chicken noodle soup.

Tonight is burritos and Spanish rice. I made up a bunch of seasoned taco meat and froze it in gallon sized bags. I just took the bag out an hour ago. Heat and serve with tortillas and all the burrito toppings. Spanish rice is so simple. Rice, chicken bouillon, onion, garlic and tomato sauce.

We are boring. A chicken is roasting. I am steaming some spinach. We have leftover brown rice. I made a kale/brussel sprout salad. I really need some inspired ideas for something new!
