Hello Mama's,

I have tried quite a few recipe's for Spanish rice in the past but have yet to find one that my husband and I really like. Do any on you have a great recipe that you are willing to share? Thanks so much for your help.

1 tablespoon of vegetable oil
1 cup of long grain rice
2 1/2 cups cold water
2 tsp. salt
2 tsp. garlic salt or 1 tsp. garlic powder
3/4 cup of tomato sauce
2 cubs knor chicken boullon (SP)

In a skillet heat oil over medium heat. Add rice and cook until lightly browned. Add water and remaining ingredients, bring to a boil.
Cover and simmer until rice is tender

Hello C.! Here is recipe everybody loves. Hope you guys like it.

1 CUP OF JASMINE RICE
2 CUBES OF CHICHEN BOUILLON
4 CUP OF WATER
1/2 8 OZ CAN TOMATOE SAUCE
1 SMALL OR MEDIUM ONION

PUT RICE IN PAN WITH OIL UNTIL LIGHT BROWN. THROW IN CHOPPED ONIONS COOK FOR THREE MINUTES..IN A SEPRATE PAN BOIL CHICKEN CUBES IN A CUP OF WATER...WHEN CUBES HAVE DISOLVED TURN OF BURNER.. PUT 1/2 8 OZ CUP OF TOMATOE SAUSE IN AND MIX WITH CUBES. WHEN ONIONS ARE DONE THROW 4 CUPS OF WATER COUNTING YOUR CHICKEN CUBE WATER.THEN COVER WITH TOP LEAVE UNTIL YOU SEE A LITTLE BIT OF WATER UNDER RICE SHUT OFF YOU DONT WANT TO DRY UP RICE...MOVE FROM BURNER LEAVE IT COVERED UNTIL READY TO EAT.I FORGOT TO MENTION I PUT SOME GARLIC POWDER ON RICE AND ONIONS BEFORE I PUT WATER. SECRET TO RICE NEVER STIR WHILE COOKING AND KEEP TOP ON UNTIL READY TO CHECK. HOPE YOU ENJOY!

This is what you will need:

2 cups Jasmin rice
2 heads of fresh Garlic (chopped)
3 cubes of the Knorr-tomato boullion
1/2 cup of Cilantro (chopped)
chopped onions
chopped tomatoes
2-tbs of comins
2-tbs black pepper
salt (optional)

Fry your jasmine rice until its gold/brown then add your garlic, tomatoes, cilantro, onions (Fry it together) add your Knorr cubes a little salt/pepper/comins, 3 cups of water, mix it and cover in medium setting for 10 minutes go back and check if it needs more water, mix it again (maks sure the Knorr cubes disolve) cover again until its done..(If you have picky eaters blend your garlic, cilantro, onions, tomatoes knorr boullion (add water) then added it to the fry rice)

Got this from the mom of a guy I dated.

Start by drizzling a circle of olive oil around your frying pan (must have a lid for it). Add your rice (i use plain old white rice) and cook it in the olive oil, stirring until it begins to turn light brown. Then add chopped onions or whatever veg you want (I love chopped carrots!). Stir just a minute so it can flash fry some. Add 2 times the amount of water that you added of rice. (Our family is small, so I use 1 cup rice, 2 cups water.) Add a pinch of salt and a small can of tomatoe sauce. (Important to note that adding sauce does not take the place of water.) Bring to a boil, stirring. Once boiling, put the lid on and reduce to a simmer. Simmer for about 20 minutes. I liberally sprinkle mine with Tony Chacheries for added spice. Yummy!

Sometimes mine can turn out crunchy, not sure why. Never use ketchup if you don't have tomatoe sauce--it's gross.

I was just searching for a recipe myself...tried a couple & didn't like them at all...just tried this one two days ago & was my favorite. It's super easy & it turned out exactly the way I wanted it!

Ingredients
2 cloves peeled and halved garlic
2 tablespoons vegetable oil
1 cup long grain white rice (not instant or fast cooking)
1 (14 1/2 ounce) can chicken broth or vegetable broth
1/4 cup salsa (any store brand will do)
1/4 cup chopped diced carrot (fresh, optional)
1/4 cup frozen corn or fresh corn (optional)

Directions
1. In a heavy pot, cook garlic in oil over high heat until browned, stirring often.
2. Discard garlic cloves.
3. Add rice to infused oil and reduce heat to medium high.
4. Stirring constantly, brown rice.
5. Add broth, salsa, carrots and corn and reduce heat to low.
6. Cover and cook for 20 minutes.
7. Fluff rice before serving.

Hello!

Sauté rice with chopped onions in oil
Pour in hot water after rice and onions are sautéed & boil
Add tomato sauce
Salt, Pepper to taste
Sometimes I even add diced tomatoes

Hope you enjoy! This is my Dad's recipe and it took me a few tries to perfect it. Sorry I don't have amounts...I never measure when I'm cooking.
