Seeking Low Fat/Low Sodium Crock Pot Recipes
Hi all, I have gotten such good advice from you all in the past, I was hoping there might be some Recipes out there for my new Crock Pot that are low in fat and sodium. Appreciate anything you can send. Thanks in advance.

Here is a blog that I go to all the time! This women cooked with her crockpot for a whole year and she has so many recipes and everything. I have made a couple of things from there and loved it!

My family's favorites are chicken (either roaster size or boneless breasts), beef roast or london broil thick steak. Simply put the meat into the crock pot with either low sodium stock (chicken, beef, or vegetable). Or you can just use water, about 1-1/2 cups. Add seasoning like Mrs Dash (various flavors available. If you want to add raw veggies, put them in with the meat. Cook to desired doneness. We like when the meat just comes apart with a fork, no cutting needed.
Another favorite is Chili. Add drained & rinsed red beans, salsa (choice of hotness factor), plus it already has onions, peppers & seasonings, & cooked ground turkey. I brown it then add taco seasoning mix. Add any other ingredients or seasonings. Cook for at least a couple hours on high, or can cook most of the day on low. Stir occasionally to keep well mixed.

chili! a base of beans (rinsed) and brown rice and tomatoes, add whatever veggies and spices you like. meat if you like.

This isn't a recipe, but I've made lots of stove-top soups that are lower in both (I think). I like making a "green" soup using fresh green and orange veggies (like spinach leaves, celery, zuccini, baby carrots, etc.) with one or two bouillon cubes (some sodium but not as much as adding salt). I toss in some lentils and barley and as much ground ginger as tastes good. You could try fresh ginger. Basically with this I load up on the fresh stuff and try to season more than salt. You could make this in a crock pot. You can get pretty experimental with soups using a vegetable base and adding whatever is handy (produce, leftover chicken, rice, barley, lentils, noodles at the last minute, etc.).

I second Vanessia's endorsement for Steph's crockpot 365 website. She doesn't use canned soup as a base often, unlike most crockpot recipes.
