Easy Crock Pot Recipes

Does anybody have any easy crock pot recipes they can recommend? I don't eat beef or pork so I'd like easy recipes for chicken, turkey or vegetarian. My husband and I are expecting our first child any day - a baby girl. We received a crock pot for our wedding (many years ago). I figure now is a good time to learn how to use it. :-)

I am not a big recipe person-so, basically-1 chicken & water and what ever you want to cook w/ it. easy.

You've gotten some great responses! I'm always looking for more recipes for my crock, too. One additional thought - for some chicken soup type recipes, you can use canned chicken instead of cut up cubed chicken. It is not as healthy because of sodium, but it is faster. I haven't found a problem with overcooking it either. It is still plenty tender!

Ridiculously easy chicken recipe that can be used for tacos or to put on tostadas.
Take 2 or 3 large boneless and skinless chicken breasts. Put them in the crockpot and pour salsa over it. (I just use Pace medium salsa the kind you buy in the large plastic jug with the handle. Put enough salsa in to cover the chicken. Set the crockpot on low and let it cook for about 6 hrs. When it is done the chicken will be super soft and you can pull it apart with a fork (it will be like shredded chicken). Cut some lettice and tomatoes and use the chicken to make tacos. Very easy and super tasty.

Here is a very easy chicken & rice casserole that our family loves! I have sent it to work with my husband to feed his coworkers and they love it too. Mostly, I love that it really feeds tons of people for super cheap. I sometimes double the recipe, and that makes 2 large 9 x 13 pans of food.

CHICKEN AND RICE CASSEROLE

Ingredients:
3 frozen chicken breasts
2 cans Cream of Chicken Soup
1 box Cream Cheese
1 package Italian salad dressing mix
3 cups rice

Crockpot:
Bake chicken (frozen and cut up into cubes), cream cheese (cubed), cream of chicken soup, and italian dressing mix in Crockpot on Hi for 3 hours.

Cook Rice (in rice cooker or instant on stovetop). Spread rice on bottom of large casserole dish. Spread chicken mixture on top, serve.

I have a yummy, but not the healthiest recipe. I make it once and a while.
Take frozen boneless, skinless chicken breast and put them in the pot, add 1 can cream of mushroom, one can of cream of chicken, one package of cream cheese and a packet of the dry ranch dressing mix! I like to stir all the ingredients together first but you don't have to. Cook on low for 8 or high for 6 check along the way and stir if you can. I serve it over egg noodles, it is delicious the chicken falls apart.

Hi L.! I LOVE the crockpot. It's by far one of mom's best friends, though cleanup can be a pain sometimes.
Anyway, here's one of our favorite crockpot recipes, though I'm sure as other mom's have listed, there are million crockpot recipe websites. Here goes:

White Chicken Chili (from menus4moms.com)

4 chicken breasts, cubed
1 cup chopped onion, cooked
2 cloves garlic, finely chopped
1 1/2 cups chicken broth
1 tsp ground cumin
1 tsp dried leaf oregano
1/2 tsp salt
1/4 tsp Tabasco sauce
2 cans (about 15 ounces each) great northern beans, drained, rinsed
1 can (12 to 15 oz.) corn, drained
2 Tbsp. chopped fresh cilantro, optional

Mix onion, garlic, chicken broth, cumin, oregano, salt and Tabasco in 3 1/2 to 6-quart crockpot. Add cubed chicken breasts. Cover and cook on low for 4 1/2 to 5 1/2 hours, or until chicken is tender (this may vary depending on how hot your crockpot cooks). Stir in beans, corn, and cilantro, if using. Cover and cook on low 30 minutes or until thoroughly heated.

I see lots of others have recommended the "Fix it and Forget it." I have it and definately recommend it also. One chicken recipe that I can give you I make regularly and can do it off the top of my head. It's called Sloppy Chicken.

I use two cans of chicken.
1 can cream of chicken
1 can cream of mushroom
1 can chicken broth
1 stack of Club crackers

Cook if for like 2-3 hours and serve over your choice of noodles. I use the no-yolks noodles. You'd have to check the cook book for the exact time and temp. I usually judge for myself on high or low depending on how much time I have before we want to eat. And it says to add the crackers at the beginning, but for myself I prefer adding them closer to the end. Like the last hour or last half hour. Hope it helps.

Our family favorite...

Chicken (frozen) cook for 8 hours/ defrosted, cook for 4-5 hours
Add: I pkg of lipton onion soup and 1 can of stewed tomatoes or salsa.
Serve with rice....

recipe also good with fat free italian dressing instead of the onion soup. use 1/2 bottle.

Crock pots are fantastic! Especially for new parents. I'm a mom of a 15 month old, and a full-time grad student, so they're essentially all my family eats. There are two cookbooks I live by. One is 125 Best Vegetarian Slow Cooker Recipes by Finlayson (published by Robert Rose, 2004). The other is Better Homes and Gardens' Biggest Book of Slow Cooker Recipes (Publisher Meredith Books, 2002). The Better Homes one has chapters using different ingredients, so you'll just want to avoid the one with beef, pork, and lamb. It also has a vegetarian chapter, a dessert chapter, a chapter using only five ingredients (if you're really in a hurry), and a chapter for soups, stews, and sides. It's a great book.
