Seeking Dairy-free Cake Recipe

My 10 month daughter has a milk protein allergy and I was wondering if you know of any dairy-free cake recipes to make for her upcoming first birthday. Thanks!

CherryBrook Kitchen makes a great yellow cake mix. My son also is allergic to milk (and other things) and we love this cake mix. Not a big fan of their chocolate cake mix though. I have other recipes if you want to make from scratch. Send me a message and I can share them with you.

I've made the below recipe twice for my son, who also has a dairy sensitivity, and it is SOOOO delicious, moist and rich and decadent. Everyone always raves about it. No ones knows it's dairy-free. I think this was originally a depression-era recipe. It doesn't even need any eggs. Try it, you won't be disappointed! I make it as a two-layer cake with raspberry jam in-between the layers and decorated with fresh raspberries on top.

Super Moist Chocolate Cake

Ingredients:

1.5 cups of all purpose flour (can substitute with whole-wheat flour)
3 tablespoons of sifted good quality cocoa
1 teaspoon baking soda
1 cup white or brown sugar
0.5 teaspoon salt (optional)
5 tablespoons canola oil (can substitute with any veg.oil)
1 tablespoon white vinegar
1 teaspoon vanilla extract
1 cup cold water

Directions:

1. Put flour into mixing bowl, add cocoa, baking soda, sugar and salt and mix well.

2. Make three deep holes in the dry mixture. Into one, pour the oil, into the next, pour the vinegar into the next, pour the vanilla.

3. Pour the water into the bowl, over all of this--- making a great big mess.

4. Mix the wet and dry ingredients together until there aren't any more lumps and pour into a 9 inch by 9 inch baking pan, two inches deep, it doesn't even have to be greased.

5. Bake at 350 for about half an hour, test with a fork.

Dairy-free chocolate frosting
Ingredients:
3 CUPS CONFECTIONERS SUGAR
3/4 CUP COCOA POWDER
1/8 TSP. SALT
2 TSP.VANILLA
1/3 CUP BUTTER/SOY/VEG. SPREAD
5 TBSP. MILK SUBSTITUTE {LACTAID/SOY/RICE MILK}

Directions: COMBINE SUGAR,COCOA,SALT & BUTTER. BEATING WELL.. SLOWLY ADD MILK UNTIL FROSTING IS OF SPREADING CONSISTENCY. SAVE IN TUPPERWARE DISH IN FRIDGE IF LEFT OVER AND REUSE.

All of Pillsbury cakes AND!!! frostings are dairy free (even the cream cheese - GO FIGURE!)!

Google "crazy cake recipe"...Got the recipe out of an old cookbook from my MIL and found it online. Delicious and easy. My whole family loves it!

After reading your request, I went to my kitchen and discovered I lost my favorite vegan cake recipe! Grr! However, I was able to find an almost identical recipe on the Internet http://www.boutell.com/vegetarian/cake.html
This cake gets moister if you let it sit, covered, for a day after baking it. I totally recommend using powdered sugar for topping, and the best way to do this is to shake it from a small mesh strainer--don't be afraid to lay it on thick. Enjoy! Thankfully there are plenty of dairy-free recipes and cake mixes now available. Check your local coop or fresh market (Whole Foods, Fresh and Natural). If you need a cake but don't feel like baking, check out a kosher bakery. I know both Woulletts and Lunds/Byerlys both carry pareve (dairy free) cakes as well as baked goods including breads. A friend bought me a dairy free cake from Woulletts for my anniversary and it was so good! And beautiful, just like a little wedding cake.

Search Vegan Chocolate Cake on yahoo. It comes up first on all recipes, and shows a picture of a cupcake. Best wishes!
