Salad Dressing Recipes?
Hi,
I was wondering if any of you have a recipe for a low fat dill ranch salad dressing? My favorite salad is the BBQ chopped chicken salad from California pizza kitchen. I love their dill ranch.. But I can easily eat more than one serving of salad dressing.. That is a weakness for me. Also if anyone has a favorite salad or any other dressings that are lower calories I would love some new ideas :)

Try substituting low fat or non fat Greek yogurt in your dressing. Thin it out with a little vinegar & a touch of olive oil. Add FRESH dill and/or other herbs along with salt & pepper to taste. I used to make a green goddess dressing with yogurt, olive oil, vinegar, flat leaf parsley, dill, cilantro & chives. I just ran it all through a food processor and added salt & pepper to taste. You could also add garlic if you'd like, although I don't care for it.

Here's the real recipe:
CPK Garden Herb Ranch Dressing
1/2 t. dry mustard
1/4 t. cold water
2 3/4 C. mayonnaise
1 C. buttermilk
7 T. sour cream
2 1/2 T. apple cider vinegar
1 1/2 T. thinly sliced scallions (greens and whites)
2 t. minced garlic
2 t. minced fresh Italian parsley
1 1/2 t. Worcestershire sauce
1 t. minced fresh dill
1/2 t. minced fresh oregano (or 1/4 t. dried)
1/2 t. freshly ground black pepper
1/4 t. minced fresh basil
In a mixing bowl, use a fork to stir together the mustard and cold water, forming a paste. Set aside for 10 minutes. Then add the remaining dressing ingredients to the bowl and, using a hand mixer at low speed or a whisk, blend together just until smooth, do NOT overmix. Cover and refrigerate until serving.

I don't have the exact measurements, but make it to taste..
I use
EXTRA virgin olive oil
Balsamic Vinegar
a Dash of either Apple Cider Vinegar or Red Wine (it add some acid)
sea salt
pepper
a nice german mustard (pref the kind in a mug cup that Cost Plus sells)
Fresh lemon.
then I whisk it all together.
taste as you go.. if too thick b/c of the olive oil.. then add more, if too thin or acidic then add more olive oil..
Then to that mix when I want something different, I will take add in a little cilantro and or a garlic clove.. I allow the dressing to marinade for a couple of hours, then I take the stuff out.. otherwise, it can get a bit pungent for some..
I also also added on occasion a piece of Habanero Pepper (but finely finely minced and just a pinch.. as you can imagine, the stuff goes a long way.. :)
so other than the Olive Oil, which has them calories about 100 per tablespoon.. the dressing isn't too bad..
