I like to fix Roast Beef Roll ups for dinner...

I take roast beef, 1/4" thick sliced and roll them in stuffing (I used red wine cooking vinegar instead of just water) and top with beef gravy...then bake for about 30 minutes....serve with sliced beets...

looking forward to hearing how other people cook theirs!!

I don't cook them or serve for dinner. I make apps with thin deli slices.
Roll them up after slathering with a mixture of cream cheese, creamy horseradish sauce, and fresh chives... then slice into little pinwheels. Top with a slice of green pimento stuffed olive. Chill for a bit, serve. Yum!

I've never heard of it but it sounds good.

Our weather is nice again today, YEAH! so we are grilling steaks, baked potatoes, sauteed onions/mushroms, caprese salad.

Hubby has a huge week of travel starting tomorrow. He'll be home tomorrow night but gone the rest of the week. So tomorrow I am making one of his favorites city chicken. I used pork tenderloin, cut into cubes, soak in buttermilk. Before cooking, coat with salt, pepper, and shake in flour to batter. Then use small skewers and put about 3-4 pieces of pork on a skewer. Pan fry until done, serve mashed potatoes, gravy and something green.

I sometimes make my Mom's "Rouladen" recipe. It is a German dish and it is served with either dumpling or Spaezle and red cabbage.

Well, I have never done this but I often take a recipie and put my latino touch, so I am thinking, why not a roast beef "fajita" roll?
I would marinate my beef with classic fajita's seasoning or a mix of salt, pepper, garlic, cummin and lemon juice (I put lemon in almost everything, lol)
then slice some onions and red and green peppers and put them a side.
Put the pork, then a tortilla on top, then the peppers and onion mix...no sure if add the cheesse here to or just on the top after the roast is done.
Then serve with rice, guacamole, or whatever you normally would put in your fajitas.
Or maybe not put the tortilla and just the peppers and served with potatoes on the side... I am getting hungry and everything sounds good to me at this point.

And Riley, is not such a thing as too much bacon! ;^o
