I'm looking for dinner recipes that use ground beef. Ive been making the usual every week or so: hamburgers, pizzas, meatloaf and tacos. Id prefer something quick and easy since I have a preschooler, toddler, and infant that all see to want my attention around dinner time.

Hamburger Soup: add in onion, garlic, peppers while frying the meat. I rinse the grease off with hot water afterwards....which totally freaks out my husband.

Soup base: beef broth &/or tomato or V8 juice. (or a combo of both).
Add: the seasoned, cooked meat. A bag of frozen stew or soup vegies. (we like the kind with okra in it.) A little bit of tiny pasta or rice....or diced potatoes.....or a combo of it all.
Seasonings: you have a variety of choices on this. I change it up regularly. I always use S & P, garlic. Then I add red pepper flakes or jalapenos if I want spicy. Sometimes I use just a packet of taco mix. Sometimes I use all Italian tomatoes (instead of V8) & Italian spices. Sometimes I add salsa, corn, & black beans. & sometimes I even use caraway & cabbage!

Easy Stroganoff:

1 lb ground beef
1 pkg egg noodles
1/2 cup sour cream
1 can cream of chicken soup
1/2 cup onion
1 cup mushrooms
1 cup shredded cheddar cheese

Brown the meat. Add the onions and mushrooms. When cooked, add remaining ingredients (except noodles) and cook till well blended. Then serve over egg noodles.

Stuffed Peppers:

1 lb ground beef
1/2 cup onion
2 cups cooked rice
shredded cheese
salsa
4-6 bell peppers, any colors

Brown meat. Add onions. When cooked, add rice, cheese and salsa. Cut the tops off the peppers and scoop out seeds. Fill each pepper with beef mixture. Top with a little more cheese if you like. Bake at 350 to warm through and cheese on top is bubbly.

Taco Salad:

You basically take everything you'd put on a taco and mush it up into a salad.

Make a big pot of chili and throw it in the crock pot! It's easy and delicious! Plus, you can usually have it for 2 nights/week or freeze some for the next time you're in a rush!

I also make a lot of mexican type casseroles as an alternative for tacos...I feel like I make those a lot too! You could also make a Shepherd's pie (technically it's a cottage pie with ground beef, but it's the same thing otherwise). You can use frozen mashed potatoes and they taste just as good if you don't have time to make your own.

In the pasta section, purchase 2 boxes of Vermicelli (fideo) ~this will feed 4
1 lb ground beef (or ground turkey)
1 small onion chopped
1 can - 14 ½ oz Whole can tomatoes squashed with juice
½ tsp ground cumin
1 clove of garlic
3 beef bullion cubes (option 3 cups beef broth)
Black ground pepper
1 zucchini shredded

In a large skillet (will need a lid) or 3 qt stock pot (will need lid)

Brown ground beef with onion, garlic, cumin, zucchini, and black pepper
Drain all fat and place meat mixture aside.

In skillet/pot, heat 2 TBLSP olive oil, add both boxes of vermicelli and brown in the oil.. Stir it constantly until it is browned. Do not let it burn.
Add Beef mixture
Add 3 cups Beef broth (or 3 cubes and 3 cups water)
Pour in crushed tomatoes with juice.

If mixture is not slightly covered with liquid, add water till it is.
When mixture begins to boil, cover and lower heat to low/medium.
Do not lift the lid.
Simmer 18 minutes. Serve in bowls..

Taco or Cheeseburger Roll

Brown 1lb ground beef. Season (taco seasoning or A-1). Use Pillsbury Croissants with flat ends end to end, place ground beef on the dough. Top w/ cheese (cheddar for taco, american or whatever kind you prefer for cheeseburger). Wrap triangle end over the toppings. Bake until golden brown.

Sloppy Joes are an easy alternative if you have rolls.

Another yummy dinner would be making stuffed biscuits. My FIL uses Pillsbury large rolls or biscuits and puts them in large muffin pans and fills them with a sloppy-joe type mix (I think my FIL uses barbecue sauce, some brown sugar, and something else, but you can probably find some good recipes). Bake until the rolls/biscuits are ready.

Casserole (sort-of)
(My version of my mom's dish Kids' Delight):

Brown burger with some onion, garlic, and add a bit of Worcestershire sauce. Once done, drain off extra liquid, if there is any.

Cook a box of favorite pasta (elbows, small shells, corkscrews, etc.), drain.

In a bowl, mix pasta, 1 can diced tomatoes (not drained), 1 to 2 cups shredded cheddar (I like things cheesey), about 1 cup sour cream, and whatever else sounds good. (I sometimes add diced black olives, you can add cooked veggies like green beans or something.) Mix in burger. Sprinkle cheese over the top if you like.

Bake about 350 degrees in covered dish until hot and cheese is melted.

This takes no time to make and I love it. My mom's recipe called for tomato soup instead of diced tomatoes, but I like it better my way. :)

My family loves my tator tot casserole - I use:
- 1 lb. Ground Beef (actually I substitute ground turkey), sprinkle a little onion or garlic powder in it as it browns, drain & put in casserole dish,
- layer frozen Tator Tots on top,
- spread one can Cream of Mushroom - or - Cream of Chicken over tots,
- sprinkle shredded Cheese (I use sharp, but medium is good too) over soup - add enough to your liking,
- Bake @ 350 for 30 - 45 minutes or until cheese is bubbly and tots are brown.

I don't care for it much myself, but my husband and son just LOVE Hamburger Helper every so often. They have a lot of different flavors and it's just as easy as can be. Sloppy Joes are another good idea. A meaty spaghetti sauce is good, too. My Mom would serve the sauce over spaghetti the first night, then mix it with elbow macaroni for a kind of goulash the next night.
It doesn't use ground beef, but scrambled eggs are good and fast any time of the day and you can mix them up with veggies, hot dog slices, Polish sausage or even pieces of bologna.
I like Chicken Helper better (than Hamburger Helper), but then I've already got so many ways to cook up chicken that I only grab it if I can't decide on anything else and I've run out of time. Left overs can be real life savers.
On the weekend (when Hubby can help play with the kids) cook up some large meals/casseroles, etc and freeze some for later in the week (just warm it up and you're good to go). I'm not above getting a large frozen lasagna once in awhile which will give me several evenings worth of supper in left over form.
A crock pot is wonderful! Dump all your ingredients into it in the morning, and all you have to do at supper time is serve it.

I have a recipe for a Bacon Cheeseburger Roll up which is very good:

1 lb lean ground beef or turkey
4 slices bacon or turkey bacon, chopped
1/2 cup chopped onions
1/2 lb shredded cheese (I use more)
1 pkg refrigerated pizza crust

Preheat oven to 400 deg. Cook ground beef, bacon & onions in large skillet on medium-high heat until evenly browned. Drain, return meat mixture to skillet, add cheese and cook until completely melted, stirring frequently. Remove from heat, set aside.
Unroll pizza dough onto baking sheet sprayed w/ cooking spray. Press into a 15x8 in rectangle baking dish. Top evenly w/ meat mixture, roll up dough starting at one of the long sides. Rearrange if necessary so roll is seam side down on baking sheet.
Bake 20-22 min or until golden brown. Cut & serve.
(depending on how your oven cooks, keep an eye on it so it doesn't get too brown - sometimes I have to cover w/ foil so it doesn't get too dark).

Meatballs. I got this from a magazine and made a few changes. I make a lot and then save half for soup.

lb ground beef
3 pieces bread, torn up and soaked with 1/4 cup milk
1/2 cup seasoned bread crumbs (or 1/2 cup bread crumbs and tbsp italian seasoning
1/2 cup parmasian cheese
2 eggs

Mix it all together
Chop 1/2 (about 1/4 cup) onion, 2-3 cloves garlic,
Saute in a little oil until the onions are soft. You can sprinkle in more italian seasoning for extra flavor, add 1/2 tsp salt and black pepper.
I puree a can of crushed tomatoes since I prefer more of a sauce and then add a little spaghetti sauce to it with a cup of water. Add the meatballs, simmer until they are done, about 30 minutes-stirring as needed. Serve over pasta or make sandwiches. My 2 yr old loves them.

For soup, boil 2 tomoatoes, 2 cloves garlic, 2 tbsp chicken broth (knorr is a good one) or boil in a can of chicken broth with a spoon of salt, 2 bay leaves, 1/2 tsp black pepper, tbsp of italian seasoning. For extra flavor and it does not add heat, add a tbsp of red pepper flakes
Boil this until the tomatoes are soft.
Pour into a blender and puree. Then pour all of this into a pot of water and add the meat balls. Bring to a boil and then simmer for 20 minutes. Add veggies and elbow pasta (or other small pasta) and cook for another 10 minutes. Sometimes I do need to add more seasoning so season to taste.

Both of these are great for times you are really just incredibly busy to cook. I have also made the meatballs the day before and put in a bag or airtight bowl in the fridge.

can add hamburger to mac and cheese too along with broccoli if your kids will eat it. Makes a quick and easy meal and all you need to add is a fruit on the side.

also noticed several tator tot type casseroles. you can never go wrong with these. I also make several different ones.

I cook the tator tots for 25 minutes because I like them a little crispy
after they are cooked, put chili on top of tator tots and sprinkle cheese on top, put back in oven about 5 min or until cheese is melted.

one of our favorites is tator tots, 2 pieced of cooked boneless chicken chopped up, 2 cans cream of chicken soup, broccoli, and cheese.

have also done tator tots, cream of mushroom, hamburger, and cheese.

I usually use ground turkey instead of ground beef and I don't spend much time cooking so here are some super quick & easy things I make:

mac & cheese w/ground beef (Trader Joe's has awesome frozen mac & cheese)

ground beef w/brown rice, peas and alfredo sauce (Trader Joe's has great frozen brown rice)

ground beef w/brown rice, corn and butter

add ground beef and/or brown rice to soup

spaghetti w/meat sauce

A couple ground beef faves in our house are tortilla beef bake and cheeseburger n tots casserole. They are both easy and pretty quick.
Tortilla beef bake
1.5 lbs ground beef
1 can cream of chcken or cream of mushroom soup
crushed tortilla chips
shredded cheese
salsas

brown the meat and mix in the soup and some of the cheese. layer crushed chips on the bottom with the meat mix on top til all the meat is used. Sprinkle with cheese and salsa on top and bake at 350 for 30 min, top with more crushed chips and bake another 5 to 10 min.

serve with sour cream and chopped lettuce or tomato if you like.

Cheeseburger n tots casserole
2 lbs ground beef
shredded cheese or velveeta (depends on how cheesy you like it)
1 can cream of mushroom soup
1pk french onion soup mix
1 bag tater tots

brown meat and mix in the soup, and some cheese if using shredded cheese. Top with a layer or cheese or chunks of velveeta, then top with a layer of tater tots. Bake at 425 for 45 min to an hour until tits are golden and crispy.
Serve with mustard and ketchup, relish too if you like.

I hope these two recipes help you out. I know they are huge crowd pleasers in our house.

google "easy hamburger dinner recipes" and tons of them pop up. FYI, I brown 5-6 pounds of hamburger with chopped onion at a time. Then I put it in quart size zipper baggies in about a pound each so I have 6-7 baggies. I put them in the freezer then just grab them when I need them. Especially works great with a sauce to thaw or soup. Good luck!

You can put some in tortillas with cheese and salsa in a skillet and have quesedillas. Serve with sour cream on the side, if desired.

Chili Mac:
Hamburger, onion, garlic, chili powder, elbow macaroni.
Cook hamburger with onion and garlic. Drain and add chili powder and some water. Simmer while you make the macaroni. Drain macaroni and mix together. Serve with veggies or a salad.

Sloppy Joe Casserole:

1 mix cornbread (WAY better if made from scratch using recipe on side of corn meal box)
1 can sloppy joe mix (I like the large can)
1 to 1-1/2 pound hamburger
cheese

Make the cornbread and put in an 8x8 or 9x9 pan.

Brown hamburger (I usually add an onion and some garlic) and follow directions for sloppy joes.

Carefully spoon sloppy joe mix over cornbread mix until covered. I find it is best to drop spoonfulls an inch or so apart first, then spread around, then fill in the rest so it is more even.

Bake according to cornbread directions until sloppy joe mix is set. Add cheese and bake another 10 min or so until golden. Yum!

You can use shredded colby jack, Velveeta, or American cheese - or whatever else you like! I use 1-1/2 to 2 cups.
