I am having some people over on the 20th. Ten including me and my husband and one 3 year old. Do any of you have some good ideas as to a main dish I could make - preferrably a meal without cheese (we have some people with lactose issues) and that's not too involved to make. I am at a loss at the moment. If you do, can you forward along the recipe please? Thanks a bunch!

How about a big pot of soup and some crusty bread and a salad? Could be some chili and cornbread, or a winter veggie soup with some sourdough bread. I have lots of great (mostly vegetarian) recipes for soups that I'd be happy to share if you're interested. Let me know.

For salad, try this:
1 head romaine lettuce
1 small can mandarin oranges (drain and save liquid)
1/2 - 3/4 cup sliced almonds
1/4 c sugar

-in a dry frypan, cook almonds and sugar stirring constantly until they're coated. Remove from pan and onto paper towel. Put lettuce, oranges, sugared almonds into salad bowl.
For dressing, take the orange liquid, some cider or rice vinegar, a little mustard, garlic salt, pepper, and olive oil. This will make more dressing than you need for 1 salad - use about 1/2.

Nicole - If you like pork this is a real easy pork tenderloin recipe. You can double it for 10 people. I usually serve it with roasted potatoes and a veggie.

PORK TENDERLOIN

Serves 5-6

¼ cup soy sauce
¼ cup bourbon
2 Tbl sp brown sugar
3 1-pd pork tenderloins

Sauce

1/3 cup sour cream
1/3 cup mayo
1 Tbl sp finely chopped scallions
1 Tbl sp dry mustard
Salt to taste
1 ½ Tbl sp vinegar

Combine soy sauce, bourbon and sugar. Mix well. Marinate pork in mixture 2-3 hours, turning occasionally. Remove from marinade and bake in pre-heated 325 degree oven for 1 hour basting occasionally.

Combine all sauce ingredients and serve on side.
