I'm making a newsletter for work and need an easy recipe for filler. Something fallish that is easy to make and has short list of ingredients. There's so many online, but I hate to list one I haven't tried or heard about personally. Any type would be ok, desserts, breads, soups, etc. TIA!

Here is a pretty easy and well enjoyed taco soup recipe..

1 lb. ground beef, browned and seasoned with a packet of taco seasoning
1 can of kidney beans
1 can of corn
1 can of cream of potato soup
1 can petite diced tomatos
1 can of beef broth

Just dump everything in a pot, including the juices from the corn and beans, and heat it up! Serve with shredded cheese and tortilla chips on top and enjoy.
It doesn't get any easier than that, and honestly, although it sounds a bit strange, everyone that I have ever given the recipe to enjoys it, including many of the kids! ~A.~

Taco Soup

1 can of Rotel
2 cans of Stewed tomatoes
1 can of Hominy
1 can of Ranch Style Beans
1 can kidney beans
1 dry ranch dressing packet
Ground Meat
Onion
Garlic

Brown ground meat with onion and garlic, drain grease
Put all ingredients into a pot or slow cooker then add ground meat and heat until warm

Top with grated cheese and tortilla chips, EAT and enjoy...

PUMPKIN CRISP

1 (15 oz) can pumpkin
1 cup evaporated milk (fat free or fat full)
1 cup sugar
1 teaspoon vanilla
½ teaspoon cinnamon
1 (18.25 oz) package butter-flavored yellow cake mix
1 cup chopped pecans
1 cup butter, melted
Whipped cream (optional)
Ground nutmeg (optional)

Stir together first 5 ingredients. Pour into a lightly greased 9 X 13 baking dish. Sprinkle cake mix evenly over pumpkin mixture; sprinkle evenly with pecans. Drizzle butter evenly over the top. Bake at 350 degrees for 1 hour or until golden brown. Remove from oven and let stand 10 minutes before serving. Serve warm or at room temperature with whipped cream, sprinkled with nutmeg, if desired.

(I used Betty Crocker Super Moist Butter Recipe Yellow cake mix.)

Here's a great recipie for Chicken Pot Pie:

2 cans of cream of potato soup
2 cans of Veg-All (drain 1/2 the water from the can)
1 Rotiessere Chicken - buy the cooked one from the store and cut into small pieces
1 deep pie shell - Mrs. Smith's is great

Directions: Preheat oven to 350. Combine 1st three ingredients and add salt and pepper to taste. Put in bottom pie shell then put remaining pie shell on top. Cut an "X" in the middle of the pie shell. Bake at 350 for one hour (note: place pie on cookie sheet to avoid spillage.)

MY family loves my Tex-Mex Casserole

1 lb ground beef (browned and drained)
2 cups minute rice (cooked)
1 can mild Rotel Tomatoes (drained)
shredded cheese (your choice)
salt and pepper (to taste)


I have cooked it both on the stove top and in the oven

mix everything togther (except the cheese). Place in casserole dish and into the oven (preheated to 375) for about 30 minutes. Top with cheese (as much or as little as you want), place back into the oven until all the cheese is melted...

absolutely delicious and easy.

Italian Beef

Beef Roast (the kind w/string tied all around it)
1 packet of Zesty Italian Salad Dressing (dry kind)
1 packet of Regular Italian Salad Dressing (dry kind)

Put roast in crock pot.
Mix both packets of dressing with 2 cups of water
Pour water & dressing mixture over roast

Cook on high for like 5 or 6 hours or on low over night.
Shred meat, serve w/banana peppers on any bread, bun or roll.
Cheese optional

For a really easy pot roast, get one that is about 3-4 pounds and put black pepper on the sides and put it in the slow cooker. Get a box of French Onion Lipton soup mix and use both packets, but about half the water (or enough to cover the roast in the cooker). Turn it on low if you're going to be gone about 8 hours, or high if you only want to wait like 5-6 hours. Put whatever veggies you want in it and it's ready!

For tortilla soup, get one can each of corn, black beans, pinto beans, and ranch style beans (or whatever other kind you like), and rotel. You'll also need 2 cans of chicken broth, a packet of taco seasoning, a packet of dry ranch dressing, and some already made chicken. Put everything in the slow cooker and it can be ready in just a couple of hours or longer if you need it to be.

AUTUMN PUMPKIN BREAD
A loaf for home, another for a neighbor

1/2 cup vegetable oil
1 cup buttermilk
3/4 cup white sugar
3/4 cup brown sugar
4 eggs
16 ounces (2 cups) pumpkin
3-1/2 cups flour
1 teaspoon cinnamon
1 teaspoon nutmeg
1-1/2 teaspoons salt
2 teaspoon baking soda
1-1/2 cups pecans, chopped (optional)

Preheat oven to 350F. Spray two 9x5 loaf pans with cooking spray. In a large mixing bowl, combine oil, buttermilk and sugars and beat until smooth using an electric hand mixer. Add eggs and pumpkin; beat until smooth, about 2 minutes. Separately, combine flour, spices, salt and baking soda. Add to pumpkin mixture and combine until just blended. Remove beaters. Add pecans and stir in with a wooden spoon. Pour evenly into two loaf pans and bake 45 minutes or until a knife inserted into center is removed cleanly. Remove from oven, let cool five minutes. Remove from pans and continue to cool.

Small pot roast, can or 2 of chili rotel, and a diced onion.. put it in the slow cooker with a can of water for 8 hours. Shred the meat and serve with bread of choice.

One of the recipes my kids & husband love is Tater Tot Casserole. There are several ways to make it but I do mine very simple.

Ground Turkey: 1.5 lbs
Grilled Onions (I omit these)
Cream of Chicken Soup: 12 oz. ( I double this & omit the cream of mushroom)
Cream of Mushroom Soup: 12 oz.
Tater Tots: 1 Bag
Cheese: as much as you like
I use Cajun Seasoning on my meat & diced green chiles.

Brown your meat & then layer a baking dish with the meat, onions, soups & then tator tots. Bake according to the directions on the tator tots bag. When the timer goes off pull it out & put your cheese on top & place back in the oven just long enough to melt the cheese.

I am not a cook, so I love easy things. I just made a cake that I saw on the cover of a magazine. You take two chocolate cake mixes and mix them according to the directions. Bake them each in bunt pans. Once cooled, level the bottoms of both cakes with a cerrated knife. Lay one, top down, on a cake plate. Frost the top (leveled bottom) with a thin layer of chocolate icing. Place the other cake right side up on top of the other one. Then use some orange colored icing (you can use ready made with a little orange, or red and yellow mixed, food coloring) to frost just the top of the cake. It'll look like a chocolate pumking. Put a large plain icecream cone in the center for a stem. You can use a little of the ready made green frosting in a tube to pipe onto the cone or make a vine around the orange frosting. It's a cute cake.

This is delicious.
Creamy Pumpkin Dip
**************************************************************************************************************
2 8 oz pkgs cream cheese, softened
1 16 oz pkg powdered sugar
1 16 oz can pumpkin
2 tsp ground cinnamon
1/2 tsp ground nutmeg
(I do cinnamon and nutmet to taste)

Beat cream cheese at medium speed with electric mixer until creamy. Gradually add sugar. Beat Well.
Stir in pumpkin and spices.

Serve with graham cracker sticks or ginger snaps.

Haystacks

One package of butterscotch morsels
One jar of crunchy peanut butter
One large can of shoestring potatoes.

Microwave the morsels and peanut butter until soft. Then add most of the can of shoestring potatoes. Stir and then drop onto wax paper a dollop attempting to keep the shoestring potatoes somewhat upright (for the haystack look). As you are about to finish add the last bit of shoestring potatoes. It seems that as you go along there will be more morsels/peanut butter at the bottom of the bowl, thus the need for a few more shoestring potatoes at the end. Keep in the refrigerator until firm, then store in tupperware-type container and keep in the refrigerator until serving or delivering.

I can't tell you how many of these I have made for children's school parties, Halloween parties and sometimes just because they are so yummy!

HMMMMMM, I don't know if this if fall, but here goes....
Shrimp dip
Cover bottom of 8x8 with cream cheese, sprinkle w/ chopped onion, pour over cocktail sauce, top off w/ tiny whole polar shrimp (drained, can find where you buy tuna fish)
Put in icebox for a while, gets better w/ time.......eat w/ scoop fritos

Cherry Dump Cake

1 can of cherry pie filling
1 can of crushed pineapples
1 white cake mix
1 stick of butter
pecans (optional)

pour and spread out can of cherry pie filling in the bottom of 9X13 pan then spread out can of crushed pineapples on top of cherry filling. spread out box cake mix (just like it is in the box) on top. Cut stick of butter in square slces and place evenly on the cake. (I cut mine in 12 slices.) Put in the oven for 30 minutes pull out and place pecans on top. Put back in oven for 10 to 15 minutes.

I keep staples on hand to make a chicken pot pie. It's VERY easy. Ready-made pie crusts, frozen veggies (corn, peas, carrots), chicken, sour cream and cream of chicken or mushroom soup. If you want the recipe, let me know and I'll get it for you. It takes about 25 minutes to prepare and 30 minutes in the oven.
